Triple Berry Banana Baked Oatmeal

Happy Valentine’s Day, everyone (if you celebrate it)!

I was talking to my brother on the phone 2 days ago and came home to find my porch light on. I didn’t remember leaving it on (and also recently discovered that I live perhaps <100 yards from a graveyard, as my neighbor so helpfully pointed out last night), so here’s the conversation that ensued (it is not unlike this conversation):
F: This may be the last you ever hear from me! Someone might be hiding in my apartment waiting to kill me!
S: Okay.
F: …You sound completely unconcerned.
S: That’s because I really am completely unconcerned.
F: Thanks a lot. That’s no way to talk to your little sister before she dies. (walks up to front door and finds the card) Oh. I may not die tonight after all.
S: How come?
F: It’s a Valentine’s Day card from Adam.
S: Oh, really? That’s sweet of him.
F: Knowing him, it probably says something terrible.

 

For the record, I was not wrong. The left is the envelope. The right is the card.

I’ll make a post about why I forgive him for such transgressions sometime.

Anyway, this baked oatmeal is glorious!! It just might be my favorite baked oatmeal thus far. *-* Blueberries were on somewhat of a sale (I’ve kinda been splurging on groceries lately since, aside from rent/tuition/utilities, I don’t ever spend money…) and I still had some strawberries and blackberries left, so I decided to make a super colorfully amazing baked oatmeal.

Triple Berry Banana Baked Oatmeal

Ingredients:
-2 medium ripe bananas, sliced
-1 1/2 cup blueberries
-8 strawberries, sliced
-4 oz. blackberries
-1/8 cup honey
-1 1/4 cup rolled oats
-chopped walnuts or pecans
-small handful (< 1/4 cup) white chocolate chips
-1/2 tsp baking powder
-cinnamon
-1 pinch of salt
-1 cup soy milk
-1 egg
-1 tsp vanilla extract

Instructions:
1) Preheat the oven to 375Ā° F.
2) Arrange the banana slices in a single layer on the bottom of the baking dish. Add sliced strawberries on top and sprinkle the blackberries, half of the blueberries + 1/4 tsp of the cinnamon over the top. Cover with foil and bake for 15 minutes, until the bananas get soft.
3) Combine the oats, half of nuts, baking powder, remaining cinnamon and salt in a medium bowl. Stir together.
4) In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.
5) Remove the bananas/berries from the oven, and pour the oat mixture, then the milk mixture over the top. Try to distribute it as evenly as possible. Sprinkle the remaining blueberries and walnuts over the the top.
6) Bake for ~30 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven. Drizzle with soy milk if desired.
