Simple Baked Eggs

Ingredients

  • 4 duck eggs or your choice of eggs
  • 1/4 cup red bell peppers sliced
  • 1/4 cup zucchini sliced
  • 1/4 cup squash sliced
  • 1/4 cup green bell peppers sliced
  • 1/4 cup red onions chopped
  • 4 pieces fresh mozzarella cheese
  • grated Parmesan cheese to taste
  • freshly ground black pepper to taste
  • garlic powder to taste

Instructions

  • Preheat oven to 400.
  • Layer your desired fillings into ramekins (suggested order: red bell pepper, zucchini, squash, green bell pepper, red onion, mozzarella cheese).
  • Crack an egg over the top, and season with desired spices (e.g. pepper, garlic powder).
  • Sprinkle grated Parmesan over each ramekin, then place them in the oven.
  • Bake for 10-14 minutes (or to your desired level of done-ness).
