Pour oats into a medium-sized pot and add 3 1/4 cups of water (you can use the bag as a measuring cup).
Bring to a boil, stir, then reduce heat to a simmer.
Cover and cook for ~25 minutes until the oats are slightly crunchy. If you enjoy softer oatmeal, cook for an additional 5 minutes.
Add contents of cheese packet, 1 tbsp milk and 1 tbsp Barleans butter-flavored coconut oil. Then add the mixed vegetables.
Stir til combined and serve!
Notes
*You can use butter instead of coconut oil if you'd like. The milk + butter/coconut oil are technically optional--they do make for a richer flavor though!
