Smoked Salmon Ricotta Scramble

This is an adaptation of the Smoked Salmon Ricotta Scramble from the Malibu Farm Cookbook!

Ingredients

  • 4 eggs
  • drizzle of EVOO
  • 1/4 cup ricotta cheese
  • 1/4 cup red onions diced
  • 4 slices smoked salmon
  • 1/3 red chili pepper sliced
  • 1-2 cloves garlic minced
  • freshly ground black pepper
  • fresh cilantro

Instructions

  • In a medium bowl, beat the eggs together with the ricotta cheese.
  • Heat the olive oil in a medium-sized skillet and soft scramble the eggs (gently whisk the mixture around).
  • Add in the red onion, garlic, and pepper.
  • Serve on a plate and top with red chili pepper and cilantro.
