Smoked Salmon Ricotta Scramble
This is an adaptation of the Smoked Salmon Ricotta Scramble from the Malibu Farm Cookbook!

eggs
drizzle of EVOO

ricotta cheese
1/4
cup
red onions
diced

slices
smoked salmon
1/3
red chili pepper
sliced
1-2
cloves
garlic
minced
freshly ground black pepper
fresh cilantro
Instructions
In a medium bowl, beat the eggs together with the ricotta cheese.
Heat the olive oil in a medium-sized skillet and soft scramble the eggs (gently whisk the mixture around).
Add in the red onion, garlic, and pepper.
Serve on a plate and top with red chili pepper and cilantro.
