Pineapple Lychee Haupia

Ingredients

  • ½ cup arrowroot powder* + ¾ cup water
  • 1 can full fat coconut milk
  • 2 tbsp raw honey use maple syrup if vegan
  • ½ - 1 teaspoon pure vanilla extract
  • 1/4 cup pineapple chopped
  • 1/4 cup lychee chopped

Instructions

  • Combine the arrowroot powder + water in a bowl and mix until dissolved. Add it to a saucepan with the coconut milk + honey.
  • Cook over medium-low heat, stirring constantly until it thickens, then remove from stove and stir in vanilla extract, pineapple + lychee.
  • Pour mixture into a pan and refrigerate overnight or until firm.
  • Cut into 1-2-inch squares, and garnish with toasted coconut (if using) before serving.

Notes

*You can technically use cornstarch to make it too (most other recipes do)!
