Raspberry Pear Mascarpone Toast

Change up your toast game with this raspberry marscapone spread topped with sliced pears! (The recipe for the spread makes a lot, so you'll have lots of extra to get creative with!)

Ingredients

  • garlic olive oil*
  • 8 oz. mascarpone cheese
  • ~1-2 tbsp raspberry honey or flavor of choice, to taste
  • freshly ground black pepper
  • sea salt
  • 1-2 pears** sliced
  • balsamic vinegar
  • fresh mint optional, for garnish

Instructions

  • Drizzle garlic olive oil onto bread and toast (e.g. on grill pan or in oven).
  • Mix together mascarpone cheese, honey, salt + pepper and spread onto toast.
  • Top with sliced pears.
  • Drizzle with balsamic vinegar.
  • Top with chopped mint, if desired.

Notes

  • *If you don't have any garlic olive oil, you can toast the bread and rub a cut raw garlic clove on the bread, then drizzle with extra virgin olive oil.
  • **You can also use peaches or figs if you'd like!
