Line a baking sheet with aluminum foil or parchment paper and place potatoes in a single layer onto the sheet. Drizzle with extra virgin olive oil + season with salt and pepper, to taste.
Gently toss to combine + place in oven for 30-35 minutes, or until crisp. Toss occasionally.
At 25-30 minutes, drizzle with truffle oil and garlic. Gently toss to combine.
Transfer fries to a large bowl and top with parsley and freshly grated Parmesan cheese (if desired).
Serve immediately!
Notes
Make sure the potatoes are in a single layer or they won't crisp up as much!
