Oven Baked Crispy Truffle Fries

Ingredients

  • 2 Russet potatoes cut into 1/3" fries
  • 2 purple potatoes cut into 1/3" fries
  • drizzle of EVOO
  • freshly ground black pepper to taste
  • sprinkle of sea salt to taste
  • 3 cloves garlic minced
  • drizzle of LeBlanc Truffle Oil
  • dried or fresh parsley, for garnish
  • grated Parmesan cheese to taste

Instructions

  • Preheat oven to 450 degrees.
  • Line a baking sheet with aluminum foil or parchment paper and place potatoes in a single layer onto the sheet. Drizzle with extra virgin olive oil + season with salt and pepper, to taste.
  • Gently toss to combine + place in oven for 30-35 minutes, or until crisp. Toss occasionally.
  • At 25-30 minutes, drizzle with truffle oil and garlic. Gently toss to combine.
  • Transfer fries to a large bowl and top with parsley and freshly grated Parmesan cheese (if desired).
  • Serve immediately!

Notes

Make sure the potatoes are in a single layer or they won't crisp up as much!
