Ingredients
Waffles
1/2cupglutinous rice flour
1/2cupwater
1cupglutinous rice flour
1/2cupcoconut sugar
2tbspcoconut flour
1/4cupcocoa powder
1 1/2tspbaking powder
sprinkle of salt
1cupcoconut milk
2tbspvegan butter* or coconut oil
2eggsor flax eggs** for vegan option
1tspvanilla extract
Toppings (Optional)
hemp hearts
dried berries
maple syrup
Instructions
Combine 1/2 cup glutinous rice flour with water in a bowl and stir until mixed well. Microwave for 30-60sec until the mixture reaches a gummy-like consistency.
Add 1 cup glutinous rice flour, sugar, coconut flour, cocoa powder, baking powder and salt into a large mixing bowl and stir together. Then add mochi mixture, coconut milk, vegan butter, eggs + vanilla and mix until well combined.
Heat up waffle maker and spray with non-stick spray. Pour in batter and cook until fluffy!
Notes
*I used Earth Balance, but Barlean's butter-flavored coconut oil would work just as well!
**Flax "egg" = 1 tbsp flax seeds + 2-3 tbsp water
