Confetti Sugar Cookie Dough

- 1/4 cup butter-flavored coconut oil, melted I used Barleans!
- 5 tbsp granulated sugar
- 1 pinch salt
- 1/4 tsp vanilla extract
- 1/4 tsp almond extract
- 2 tbsp vanilla soy milk
- 1/2 cup your choice of heat-treated flour
- 2 tsp sprinkles
Microwave flour in microwave-safe bowl, stirring every 30 seconds until flour reaches 165 degrees on an instant thermometer (~60 sec).
Add melted butter-flavored coconut oil + sugar to a bowl and use a fork to mix together.
Add the salt and vanilla + almond extracts.
Add milk to the bowl and use fork to mix ingredients together until well blended and fluffy.
Add flour in spoonfuls to the butter/sugar mixture and use the fork to mix until there are no longer any streaks of flour.
If the mixture is too dry/crumbly, add a tsp of milk and mix.
Add sprinkles + mix until they're spread evenly throughout the dough
Use a spatula to scrape the sides/bottom of the bowl to form a ball of dough.
