Air Fryer Roasted Vegetables

we used ~2 cups rainbow carrots, 1 cup broccoli, 1 cup mushrooms, 1 cup Brussels sprouts
extra virgin olive oil
freshly ground black pepper
sea salt
Instructions
Preheat your air fryer to 360 degrees.
Add vegetables into a bowl and toss with extra virgin olive oil and desired seasoning to coat.
Line air fryer basket with parchment paper and arrange vegetables* in the basket.
Cook for 10 minutes**, stirring every 5 minutes.
Notes
*Try to avoid letting them touch! Gotta socially distance your veggies too. Although obviously not six feet. A couple millimeters will do.
**If you're cooking more firm vegetables (e.g. sweet potatoes, carrots, etc., cook for 15 minutes!
