Peach Cobbler

- (Peach Mixture)
- 3 large peaches, sliced
- 1 tbsp lemon juice
- ¼ cup flax seed meal
- 2 tbsp almond meal
- 2 tbsp honey
- (Crust)
- ⅔ cup almond meal
- ¼ cup quick oats
- 1 tbsp cinnamon
- ¼ cup flax seed meal
- -1/4 cup brown sugar
- 1 tbsp honey
- 1 tbsp Earth Balance
- 2 tbsp unsweetened applesauce
- Preheat oven to 375 degrees.
- Mix together all ingredients for peach mixture into a bowl. Let sit for ~10 minutes to let flavors mix together.
- In a separate bowl, mix together all the crust ingredients to form a doughy texture.
- Pour peach mixture into baking dish and cover with the crust.
- Bake uncovered for ~35 minutes.
- Let sit for ~10 minutes and serve plain, or with whatever toppings you want!
