Turkey Sausage Mushroom Pizza with Sourdough Crust

Welcome to Foodie Friday! I’m linking up with Annmarie from the Fit Foodie Mama + Esther from Chocolate Runner Girl to create awesome healthy recipes each week! This week’s theme = Pack Your Lunch!

I’ve never made pizza (from scratch) on my own (although there have definitely been many pizza adventures, for instance, this Pizza Bread Bowl and this Tikka Masala Pizza Cake!), but I’m most definitely going to have to do it more often! This Turkey Sausage Mushroom Pizza was super tasty, and bringing this delicious goodness to work for lunch will surely make everyone around you jealous! :O (It certainly did for the people around me! :P )

If you recall Mossy 2, which is basically like a second pet to me, I’ve been dutifully keeping him alive and it’s been awesome being able to make my own pancakes and fresh homemade dough!

This is before I baked it!

This is before I baked it!

I love being able to pick all my own toppings and knowing all the ingredients that are going into my pizza! <3

Fun fact about the plaid background–that actually used to be one of my car blankets for if I had to sleep in my car during my 4th year of medical school! Nice how things can get repurposed, yes yes? I figured it’d make a nice backdrop so it’s made a number of appearances in my food photos. :P

You'll Need...

  • 1 cup sourdough starter, unfed (straight from the fridge!)
  • 1/2 cup hot tap water
  • 2 1/2 cups whole wheat flour
  • 1 tsp sea salt
  • 1/2 tsp instant yeast
  • 1/4 cup yellow onion, chopped
  • 1/4 cup white button mushrooms, chopped
  • 8 slices turkey sausage
  • 2-3 cloves garlic, minced
  • 1-2 tsp nutritional yeast
  • 1 tsp freshly ground black pepper
  • 1-2 tsp cayenne pepper
  • 1 tsp dried parsley

Directions

  1. Stir sourdough starter and transfer 1 cup to a mixing bowl. Add the hot water, flour, salt and yeast.
  2. Knead until smooth and slightly sticky, then place it in a lightly greased container and let it rise until it's doubled in bulk (~2-4 hours*).
  3. Divide the dough in half. Place half the dough in a greased pan (or on aluminum foil) and let rest for another 15 minutes. Gently press dough to the edges of the pan.
  4. Cover the pan and let rise until it reaches your desired thickness.
  5. Preheat oven to 450 F.
  6. Pre-bake for 4-5 minutes.
  7. Spread tomato paste evenly across the dough. Add mushrooms, onions, garlic, and spices, then bake for an additional 8 minutes (or until toppings are done to your liking.
  8. Remove from oven and transfer it to a cooling rack to keep the bottom crisp.

Additional Notes

*For a faster rise, place the dough somewhere warm or increase the yeast!
