Tropical Protein Banana Muffins

This is week 12 of my 14 straight weeks of 70-80 hour work weeks and portable breakfasts have definitely been making my life easier! Lately, I’ve been talking with pretty much all my patients about how to prevent constipation–as such, this recipe has extra fiber in it (I threw in ground flaxseed–1 serving (2 tbsp) = 4g dietary fiber + 3g protein)!

I used Barlean’s Forti-Flax, which includes omega-3’s, fiber, and lignans (antioxidant-rich phytonutrients)! It’s been delicious in my smoothies so I figured I’d try baking with it too. (Next up =Ā salad/roasted veggie toppings!)

I’m all about kitchen cleanses and like to challenge myself in coming up with random concoctions using things I already have! It forces you to get creative and you also save some money + time in the process!

My best friend and first cooking buddy ever actually came up with this recipe, except with blueberries (these areĀ our past creations!)–I just made some alterations based on what I already had hanging out in my apartment, so they became Tropical Protein Banana Muffins instead!

Tropical Protein Banana Muffins

Prep: Cook: Yield: 12 muffins or 1 loafTotal:

A quick, easy-to-make and portable protein-packed snack!

You'll Need...

  • 4 overripe bananas, mashed
  • 5 scoops vanilla protein powder
  • 1 tsp vanilla extract
  • 2 tsp almond extract
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 1/2 cups frozen strawberries/mangoes/pineapples
  • 5 eggs
  • 1 cup old-fashioned oats
  • 1/4 cup ground flaxseed

Directions

  1. Preheat oven to 350.
  2. Mash bananas first and add in protein powder. Mix thoroughly before adding any other ingredients to avoid clumping.
  3. Mix in all other ingredients.
  4. Distribute evenly into silicone baking cups or muffin tin.
  5. Bake at 350 for 20 minutes or until it passes the toothpick test.

Additional Notes

You can make this in loaf form too! Just bake for 40 minutes to 1 hour instead of for 20 minutes.
If the mixture seems very dry, you can add 1 cup milk of choice (e.g. unsweetened vanilla almond milk).

    I always have a bag of flax seeds in the pantry..and when I came home for winter break a few months ago…I found that my bag of flax seeds (along with many other things) and torn and ripped open…from one of the little mice we get in our house during the winter :( Sigh…

    The first thing that comes to mind are smoothies! Also no-bake energy bars! I’d add it to homemade “ice cream” treats made with banana, cashew butter, honey and other good ingredients like this!

  11. I like protein banana pancakes, but Iā€™ve never had protein banana muffins. With your crazy schedule, you have to have breakfast to-go I bet most of your meals are eaten on-the-go. Great recipe Farrah :)

    I make up “power oatmeal” by throwing a few handfuls of chopped walnuts, pistachios, dried fruit, etc. into the oatmeal box when I first open it; that way, all I need to do in the morning is add water and nuke for a few minutes. The ground flaxseed would make a good addition.

    I love banana cakes, and muffins, sometimes I made them too but I have to admit that Your banana muffins look so good. I can not imagine that as a family medicine intern, how you manage your time to cook and make new recipes on your blog :)

    I would use the flax in my protein shakes and also my protein pudding.

  12. I love banana muffins and banana bread. This looks great. I canā€™t eat straight bananas anymore as Iā€™m allergic, so making them into muffins or banana bread is probably the only way I can enjoy them still. Banana muffins and bread are always a hit in my house! I have used them as a yummy breakfast, or a snack to send to my kids at school. This seems like a great recipe!
