Three Berry Tartlets

Welcome to Foodie Friday! I’m linking up with Annmarie from the Fit Foodie Mama, Esther from Chocolate Runner Girl + Jess from Hello To Fit to create awesome healthy recipes each week! This week’s theme is…Berries! (It’s National Berry Month!)

Have you ever used phyllo dough? I never have, but happened to find a box of it in my fridge (who know how it got there) and decided to make something with it! We were feeling somewhat lazy, so we decided to try to go with something simple, and made our own berry tartlets!

I’d like to think they turned out pretty well! They only require 4 ingredients (assuming that you’re not super ambitious and making the phyllo dough from scratch…)!

We were running low on berries, but if I had it my way, I’d totally top all of these with heaps of berries!

Three Berry Tartlets

  • 4-5 phyllo sheets, cut into 12 4×4 squares
  • 2-3 tbsp butter or Earth Balance, melted
  • 3/4 cup berry blend*
  • 1/4 – 1/2  cup mango passionfruit jam

Instructions:

  1. Preheat oven to 375 degrees.
  2. Brush each phyllo layer with butter (or just the top if you’re pressed for time). Bake for ~10 minutes, or until dough is lightly browned + crispy.
  3. Add a small dollop of jam to each phyllo tart shell.
  4. Top with berries and serve!

*If you’re using frozen berries, put them back in the oven for ~10 minutes!

  11. Genius! And so simple, I love it. I would make it….. however, I tend to eat berries by the handful when they are around so they never last long here!
