Thin Mint Popcorn

Merry Christmas Eve, everyone! (For those of you who celebrate!) And also Christmas, since I’m not posting tomorrow. :P

I had some leftover Thin Mints in my freezer and was trying to clear up space, so I decided to throw them into some popcorn! Recipe adapted from here! This will be a delicious snack to have whilst sipping hot chocolate and curled up in a bunch of blankets on a couch and binge-watching movies tomorrow… (Or whatever it is that I’ll be doing tomorrow. If the weather doesn’t hate me, I’ll hopefully be cuddling with a bunch of cats at Please Save A Cat.)

If you’re magical enough to not eat this in 1 sitting and manage to actually split it into 4 servings (hah), each serving would be ~228 calories, 30g CHO’s, 12g fat, 2g protein, 75mg sodium + 2g fiber! So…definitely not healthy, but also could definitely be worse.

Thin Mint Popcorn

Ingredients:

  • 1/2 cup unpopped popcorn kernels
  • 1 tbsp coconut oil
  • 9 Thin Mint wafers, coarsely chopped
  • 1/8 cup white chocolate chips
  • 1/8 cup semi-sweet chocolate chips

Instructions:

  1. Heat the coconut oil in a large pot on medium-high heat (~6-7/10, if your stovetop happens to have numbers).
  2. Pour in the popcorn kernels and cover with a lid, leaving a tiny bit of space to allow it to vent.
  3. Coarsely chop the Thin Mint wafers.
  4. Pour the chocolate chips into a microwave-safe bowl, and when the popping starts to slow down, heat it up for 30-second increments until mostly melted.
  5. Remove popcorn from heat and pour into large bowl. Stir the melted chocolate in and toss/mix to coat evenly.
  6. Pour in the Thin Mint pieces and toss to mix!
