Thai Tea Protein Cookies

I’ve been super-slacking in the realms of making recipes/meal-prepping! :[ But it’s for good reason! (I’ve actually been getting to have a life lately!) I’m also trying to be a more productive member of society so I’ve embarked on a number of projects with my advisor and my senior residents so that I can pursue both community medicine and sports medicine (more or less)! :]

Wayyy back in the day, I reviewed Milk Bar Life, and I decided to adapt a recipe from there! I don’t bake very often, and don’t anticipate myself doing this much in the next couple months because it’s been hot af over here (92 degrees yesterday, although it was a torrential downpour on Saturday so go figure).

The cookies I made look vastly different (and nowhere near as pretty) as the ones pictured in the cookbook because I changed up…a ton of things. I wanted to add protein and I also don’t have any sugar in my apartment other than coconut sugar, so…you gotta work with what you have! :O

They actually turned out pretty well, considering the fact that I completely winged it! Yes, they’re not the prettiest, but they’re super tasty (as long as you happen to love Thai tea, which I do).

Thai Tea Protein Cookies

Yield: ~1.5 dozen cookies

You'll Need...

  • 1 cup butter-flavored coconut oil
  • 1 cup coconut sugar
  • 1 1/3 cups all-purpose flour
  • 2/3 cup Bob's Red Mill Nutritional Booster (Protein Powder, Unflavored)
  • 2 medium eggs
  • 2 tbsp Thai tea leaves
  • 2 tbsp dry skim milk powder
  • 1 tsp baking powder
  • 1/4 cup dried mango, diced
  • ~1/8 cup vanilla soy milk

Directions

  1. Cream together butter + sugar.
  2. Add eggs and gently mix until just incorporated.
  3. Add flour, protein powder, tea leaves, milk powder, baking soda, and dried mango bits. Mix until combined.
  4. If mixture is too dry, add in soy milk (or your choice of milk) until it forms a sticky dough-like consistency.
  5. Bake for 12-15 minutes, or until it passes the toothpick test!

  2. Those look like a really yummy treat! I have never used butter flavored coconut oil before, I am going to have to look into that!

    I hear ya about cooking/food prep! I am going to a fitness instructor training tomorrow so I have been swamped with prep for that plus real life! Haha

  3. Ooh I’ve never seen butter flavored coconut oil. That would definitely get someone to like coconut oil if they don’t like coconut. And I always love how you put exotic flavors in your goodies.

  7. To be honest, I’ve never really found a tea that I’ve liked. However, my sister does so I think these would be something she’d enjoy! Thanks for sharing – I love that you switched up the recipe and they tasted good.
