Sweet Potato Waffles

First off…hey guys.

 

What can I say? I decided to be an overachiever. I was doing so well on this rotation with one hand that I figured I’d try to finish it off with neither one fully functional.

Good thing I made this recipe ages ago, because I totally can’t cook now.

What did I make!?!? MITOSIS ANTI-GRAVITY SWEET POTATO WAFFLES.

Sorry for shouting–it was a trying task. :O

I had a hard time deciding whether to post this recipe for April Fool’s or for Sweden’s National Waffle Day last weekend. This Mitosis Anti-Gravity Sweet Potato Waffles recipe needs to come with a pretty fat disclaimer. Why mitosis, and why anti-gravity?

It’s mostly because our first two attempts to get the right consistency resulted in…

  1. Mitosis: Attempt #1 found that our waffle decided to become two instead of one (aka split into two pieces so one half stuck to the top half of the waffle iron and the bottom half stayed at the bottom)
  2. Anti-Gravity: Attempt #2 witnessed our waffle decided not to split, but it instead opted to defy the laws of gravity–aka staying snugly in my waffle iron even when I overturned it in an attempt to shake it out.

When Flo came over, she saw me with the plate of waffle remnants I’d managed to excavate from my waffle iron and, from a distance, thought we’d made fried chicken. (sigh.)

But…three times the charm, right?

(To be fair, even the scraps are super tasty, even if they’re not the prettiest! Add a little sriracha (or hot sauce of your choice) and throw it over a veggie scramble and bam! You’d have a deliciously nutritious breakfast…or really, any meal.)

We used organic eggs from Costco, which we have lovingly named “Mighty Eggs” because their shells are pretty darn tough. I’ve been spoiled by our chicken (when they’re not on strike) + duck eggs over at Please Save A Cat, but these were pretty comparable!

Mitosis Anti-Gravity Sweet Potato Waffles

Sweet Potato Waffles

Ingredients:

  • 2-3 large sweet potatoes
  • ¾ cup oats, blended into flour
  • 5 eggs
  • Tears of despair and some motivational pep talks

(Toppings)

  • Coconut almond butter
  • Siggi’s yogurt (or your choice of yogurt)
  • Fresh fruit, diced
  • Drizzle of honey
  • Sprigs of fresh mint

Instructions:

  1. Grate sweet potatoes.
  2. Add eggs, sweet potato, and oat flour into a bowl and mix.
  3. Pour batter into waffle iron and spread evenly.
  4. Remove when waffle iron indicates that waffle is ready.

P.S. I did not in fact end up with another boxer’s fracture. I just volunteered my other hand as the practice dummy for another med student. My left hand is mostly fine, other than a minor burn from the saw he used to cut my cast off. Hope I didn’t worry you too much?! April Fools? :D?

    1. That would be sad times indeed! Thankfully, I still do have that left-hand! I actually finished a whole chirashi bowl with chopsticks with my left hand over the weekend! Super proud of self!

    1. I’m okay!!One of the fractures is hopefully in the process of healing, and I get the cast off this coming Friday! The other one was just me volunteering myself as a subject for a casting workshop! :]
