15 Minute Frittata (+ review of Supermarket Healthy)

I’m actually repurposing an old recipe for this week because I’ve been swamped and haven’t been doing much cooking lately. (This recipe was first published back on 2/4/15!)

Confession: Back in the day when I actually incorporated regular cardio into my life (2009-2010), I used to watch The Food Network whilst plodding along on the elliptical machine if I didn’t feel like doing mindless laps around the indoor track of my undergrad gym (I know I’m biased, but I still think it’s the best one ever) or running around outdoors through all the pollen.

Since starting and finishing grad school, and all throughout medical school, my kitchen experiments/cooking journeys have led me to resort to all sorts of creativity when it comes to having the “right ingredients” and me being a super frugal penny-pincher. Despite living on ~$10k/year, I’m still in just under $200k debt right now. This excludes interest. (Doesn’t do much to encourage higher education in this country, does it?)

But I digress.

All that backstory is just to illustrate why I love this cookbook. :] Melissa is a mother of four, and wanted to figure out how to make food that was just as healthy and good as what was being sold in fancy-schmancy premium markets, but also respected her need to be a smart shopper.

In the beginning, Melissa includes a short discussion on organic foods, GMOs, artifical flavors/sweeteners, food allergies, buying local, and smart indulgences. There’s also a page on “Pantry Must-Have’s” (which made me happy, because it’s pretty similar to mine)!

Supermarket Healthy is divided into chapters based on type of meal/food (e.g breakfast, snacks, soups/stews, pasta, fish/seafood, etc.). It would not be a stretch to say that I kindasorta want to make everything in this book (with some modifications based on my own dietary restrictions). Not all of the recipes include pictures, but the ones that do all look amazing.

Just to give you an idea of the recipes in here, I picked out one from every section: you can learn to make Almond Waffles with Raspberry-Basil Sauce, Warm White Bean & Sage Dip, White Bean & Roasted Pepper Soup, Vietnamese Chicken-Kale Wrap, Acorn Squash “Fondue,” Caramelized Brussels Sprouts, Pine Nuts & Penne, Cod & Coconut Curry over Cilantro Rice, Piri-Piri Barbecued Chicken Kebabs, Crispy Beef Tacos with Pineapple-Avocado Salsa, Cauliflower Steaks with Garlic-Parmesan Crust, Roasted Fruit & Homemade Ricotta…are you hungry yet? Because I really am.

There are also “blueprints” dispersed throughout her book, ranging from skillet-glazed vegetables to meatballs to trail mix. These blueprints don’t provide units of measurement, but rather, give you a “base” to experiment with on your own, which I think would work well for anyone who didn’t necessarily like following recipes, but wanted inspiration or ideas on how to make certain dishes.

Each recipe includes basic nutritional information (calories, protein, dietary fiber, sugars, total fat), and she also includes little different-colored boxes throughout the book on supermarket, kitchen and entertaining strategies to give you tips on how to save money while shopping, how to save time while prepping food, and how to stretch food/make dishes party-friendly. I honestly think there’s something for everyone in this book! :]

I had a ton of fresh veggies left over from an impromptu lab meeting, so I used/adapted her Frittata blueprint to make the following! I was gonna throw in mushrooms too, but forgot. :[

You'll Need...

  • 3 strips turkey bacon, diced
  • EVOO
  • 1 green bell pepper, diced
  • 1-2 fresh tomatoes, sliced
  • 6 eggs
  • 2 cloves garlic, minced
  • pinch of sea salt
  • freshly ground black pepper, to taste
  • 1 tsp chili powder
  • ~1 oz. Cabot Alpine Cheddar, grated/shredded

Directions

  1. Preheat oven to 350 F.
  2. Prep and chop up the vegetables, then saute in a splash of EVOO with the turkey bacon, salt and pepper.
  3. Whisk together the eggs with salt, pepper, chili powder and grated cheese.
  4. Pour egg and cheese mixture over the veggies and meat, then top with additional grated cheese.
  5. Bake for 10 minutes until set.
  6. Let rest and serve warm.

  2. Even my husband like Melissa D’Arabian. That says something. And I too used to watch the Food Network while working out. I think that we all go through that stage at some point in our lives :D

  4. Ugh, I hate all the cooking shows at the gym. I mean I love the food netword, but I don’t want to spend my entire workout feeling hungry haha
    I’ve definitely had some ah ha moments in the kitchen after the gym though, so maybe that’s why?
