Strawberry Mango Agua Fresca

I’ve been super lazy in the food-making world lately. When this happens, I generally cheap out with a drink recipe.

I’m sad that it’s not around any longer, as it was my favorite food truck ever and my favorite eatery here, buttt at least its memory lives on! I did a copycat recipe of their Apple Nachos in the past and today, I’m doing a spinoff of their Strawberry Agua Fresca…in that I added mango! ;P

My advisor recently got a grant for an awesome project that’s connected with the soup kitchen that Soupervan used to donate meals to. She wants me to take over if I’m interested. It could count as my scholarly project that I need to complete to graduate from my residency. I could also potentially get published/go to national conferences to present about it.

Obviously, I’m all in, but I’m also partially split because I’d also love to pursue sports medicine. We (sadly)  can only choose one fellowship track…so I’m currently mulling over the idea of doing the sports med track along with this project. My program director told me I could go for it but that free time is also nice to have.

Strawberry Mango Agua Fresca

Course: Drinks
Cuisine: Mexican
Keyword: 5 ingredients + under, easy, vegan, vegetarian
Servings: 2

Ingredients

  • 6-7 strawberries
  • 1/8-1/4 cup mango nectar
  • 1-2 tbsp lemon juice
  • 2 cups of water

Instructions

  • Combine all ingredients into a blender and blend until smooth.
  • Garnish with strawberry slices.
