Strawberry Apple Spinach Salad

GUESS WHO’S GRADUATING IN 8 DAYS?!?

If you come here fairly regularly, I apologize for the countdown in every other-ish post. It’s just still really hard for me to believe right now, so this is helping me to accept the reality that is my being done with school forever and graduating 21st grade. At longggg last!!!

This recipe could well have fit under the “Kitchen Cleanse” Foodie Friday theme, since I had a bunch of apples I wanted to use up (they’re a great fruit to have on hand when you only have one functional hand!), and some pistachios that I didn’t realize I wouldn’t be able to eat. (They are pretty hard to shell with one hand. :'( )

But guess what’s in season this month?!

Strawberrieeeees!!!

If you were to ask me to pick a favorite fruit, I probably wouldn’t be able to answer you, but strawberries are somewhere up there (along with apples, mangoes, blueberries, raspberries, peaches…), so I definitely had to throw them into this salad too!

Strawberry Apple Spinach Salad

Ingredients:

  • 2-3 apples, diced
  • strawberries
  • 1/2 cup pistachios, shelled
  • 3 cups spinach
  • freshly ground black pepper, to taste

(Dressing)

  • drizzle of extra virgin olive oil, to taste
  • drizzle of pear vinegar*, to taste

Instructions:

  1. Combine all ingredients into a large salad bowl.
  2. Drizzle in olive oil and vinegar as desired.
  3. Toss to combine and serve!

*If you don’t have pear vinegar, white balsamic vinegar, white wine vinegar, or apple cider vinegar would also work!
