Spinach Tomato Rotini

I actually haven’t had/made pasta in ages, but this turned out really well! :] Recipe adapted from here!

Spinach Tomato Rotini

Ingredients:

  • 12 oz. tri-color rotini
  • 1 cup Greek yogurt
  • 2 tbsp all-purpose flour
  • 1 tbsp EVOO-4 cloves garlic, minced
  • 1 can (14.5 oz) petite diced tomatoes
  • 3 cups spinach
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes (omit if you don’t like spicy!)
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • grated Parmesan cheese, to taste

Instructions:

  1. Cook pasta in a large pot of boiling salted water. Drain well.
  2. In a small bowl, whisk together Greek yogurt and flour.
  3. Heat EVOO in a large skillet over medium-high heat. Add garlic, stirring frequently, until fragrant (~1 minute).
  4. Stir in tomatoes, spinach, and all spices. Season with salt + pepper and cook, stirring occasionally until spinach starts wilting (~2 minutes).
  5. Gradually whisk in Greek yogurt/flour mixture with Parmesan. Cook, stirring constantly, until slightly thickened (~3-4 minutes). Stir in pasta and gently toss to combine.
  6. Top with Parmesan (to taste) and serve immediately!

  1. Yum! I like a bit of spicy so I’d definitely add in those red pepper flakes! Looks delish :)
