Roasted Garlic Cauliflower Broccoli Soup

I’m joining up for Meatless Monday today with a hot soup! :] Before I get to the recipe, I wanted to share two things!

One of them is the workout I did yesterday “with” Laura (live on youtube! :P ). This is actually the first video I’ve ever posted to my blog! :O! I didn’t know it was that easy. >_> This is somewhat of a game-changer. Maybe I’ll actually start doing something with my YouTube account!

The second is the gratitude list I made for yesterday’s Elf 4 Health Challenge! :]

Lately, I’ve been eating a lot less meat because there’s a super nice lady at my church who worries that I don’t have time to make my own food. She’s taken to packing up all the good leftovers from potluck for me to take home after choir practice each weekend. (Most of my church is vegetarian.)

My protein intake has actually dwindled in comparison to what I was eating when I prepping for my powerlifting competition, but since I don’t think I’ll get to enter another one in the foreseeable future (and I’ve also been saving money by finishing off the food in my apartment), I guess it’s a-okay!

This recipe is awesome in that if you happen to want it to be more like mashed potatoes, you can just add 1/4 cup of plain Greek yogurt and blend it til it reaches your desired consistency. Since I unfortunately have no blender powerful enough (or a food processor), I decided to make this into a soup instead. :]

Roasted Garlic Cauliflower Broccoli Soup

Roasted Garlic Cauliflower & Broccoli Soup
Ingredients:

  • 1 bag frozen cauliflower florets
  • 1 bag frozen cauliflower + broccoli florets
  • drizzle of EVOO
  • 1 head of garlic
  • sprinkle of sea salt
  • copious amounts of freshly ground black pepper
  • 1 cup vegetable broth
  • 2 cups unsweetened almond milk

Instructions:

  1. Preheat oven to 350.
  2. Slice off top of head of garlic + drizzle with extra virgin olive oil. Wrap in foil.
  3. Spread cauliflower florets onto a baking sheet in an even layer and drizzle with olive oil (or melted coconut oil).
  4. Roast for ~40 minutes. Stir the cauliflower halfway through cooking. Allow it to cool and remove garlic cloves from the head of garlic.
  5. While on medium heat, mash together the cauliflower, milk, salt, pepper ,and chicken/vegetable broth in a bowl until it reaches your desired consistency.
  6. Season with more pepper and serve!

      Same here! :D I keep wanting to eat salad, but then I look at it in the fridge and go, “…nope, too cold. BACK TO SOUP!” sigh.

  3. SO long story short- I haven’t eaten broccoli soup since I was in college and found a lump of fat in it and I rarely make soup at home BUT this looks really really good and I’m thinking I might just have to give it a try!

    And it’s really interesting that most of your church is vegetarian. Do you know why this is? I’m Australian (but lived in Canada with my husband the past few years, and now we live in Thailand). And in Australia, our most well known vegetarian brand is owned by a church group who are all vegetarians. I think they might be Seventh Day Adventists? I’d have to check.

      I’ve never been to Australia, but I have lots of love for Thailand! :D I’ve visited a couple times and really miss the food there. <3

      I'm a Seventh-Day Adventist as well! :P I think a fair number of SDA's end up being vegetarian because we already don't eat seafood (other than fish) or pork anyway, so another couple meats aren't too much harder to cut out. :P (I like chicken and salmon too much to make the leap. >_>) As a whole, we like promoting healthy living/food, so that might be it! :] My church back in WV where my school was is mostly vegetarian/vegan too! :P

  12. This sounds delicious and easy! Do you not have to peel the garlic? When you say a “bag” of broccoli, do you mean 1 pound? (I buy the bigger bags because they’re a better value–but it’s easy to estimate what fraction of the bag is 1 pound.)
