Hot Mama’s White Bean Chicken Chili

Freezer meals are all sorts of wonderful, especially when you don’t have much free time to speak of!

Back in the town that my school is in, we have Taste of our Town (“TOOT” for short) every second Saturday in October to showcase downtown shops and local businesses/organizations.

It’s a day filled with food, music and fun, and for my first two years of medical school, I’d volunteer with my school’s Family Medicine Club to offer blood pressure screenings to the community, then run off to church to play piano, and then come back to join in on the festivities.

Last year, Linda made her Hot Mama’s White Bean Chicken Chili to sell at TOOT–the proceeds go toward food, litter, vet bills, and other supplies to take care of the 86 cats that we take care of. <3 Since it went so well last year (a bunch of people came back to ask if they could buy more to take home to freeze for later), she’s making it again this year!

And I can actually be there to help out this year!! Thanks to my scheduling catastrophe, I will not in fact be flying out to Washington this weekend for my would-be audition rotation.

But since one of my philosophies in life is to always look for the silver linings, the fact that I can’t go on that rotation means that I will still be here, so that means I can help Linda out for Taste of our Town this year! (I’m still keeping my fingers crossed that my school will get back to me before November, so that I can at least go then, but…we’ll see what happens.)

Hot Mama’s White Bean Chicken Chili

Hot Mama's White Bean Chicken Chili

Ingredients

  • 1 package 16 oz northern beans
  • 1 red onion diced
  • 1 package frozen Mexican corn mix
  • 1 bell pepper chopped
  • 4 stalks celery chopped
  • 4 cups reduced sodium chicken broth
  • 1 jalapeño chopped
  • 2 cans (15.5 oz) cans of cannellini beans white kidney
  • 3 ~12 oz boneless chicken breast, grilled
  • 1 4 oz can diced green chiles
  • salt to taste
  • freshly ground black pepper to taste
  • 3-5 cloves garlic minced
  • Avocado

Toppings

  • fresh cilantro to taste
  • avocado cubed (to taste)
  • red chili pepper sliced (to taste)
  • sour cream to taste

Instructions

  • Soak beans overnight in water and a sprinkle of salt.
  • Drain water out and rinse the beans.
  • Add chicken and broth to crockpot and let cook on high for 1 hour, then shred the chicken and add the beans and all other ingredients.
  • Cook for 4 hours on high and serve!
  • Top with fresh cilantro, avocado, pepper, and sour cream!

Notes

Once this cools, you can dispense it into tupperware and then freeze it for a later meal!

  1. Man, I love chilies, and I’m not a big fan of ground beef, so chicken chili is my preferred version, anyways. The only chili-type of beans I can find here are red kidney beans and black beans, though, so I have to make do with those.

    1. I feel like you can’t go wrong with the types of beans used when it comes to chili–the kind I usually make uses red kidney beans and black beans! :D
