Quinoa Fried Rice

I didn’t do much cooking as a kid, but I think fried rice was probably one of the very first dishes I ever made. Makes sense, given that it’s one of the easiest things in the world to make and is super filling and versatile–you can put in anything you want and also top it with pretty much anything!

Since I’m actually out of rice at the moment (I know I know, what kind of Asian am I?!) but have a plethora of quinoa, I figured I’d finally put up the recipe for the quinoa fried rice I usually make when I’m pressed for time and need something nutritious/filling and super easy to make!

Fried rice works best when you make it using day-old rice, and it’s kinda the same deal since we’re using the quinoa as the “rice.” If you don’t want to wait a whole day, the alternative is stuffing it in the fridge to chill for a little while!

You'll Need...

  • 1 1/2 cups quinoa
  • 2 cups water or vegetable/chicken broth
  • 2 cups frozen vegetables
  • 2 garlic cloves
  • 1 tbsp sesame oil
  • 4 eggs
  • 2-3 tsp ground ginger
  • 2 tbsp soy sauce

Directions

  1. Add quinoa, water (or broth, if you're using that) to rice cooker and let it cook.
  2. If you don't have a rice cooker, bring the quinoa + water/broth to a boil in a saucepan and reduce to a simmer for ~20 minutes, until the quinoa is fluffy.
  3. Remove from heat and transfer quinoa to a container to chill in the fridge/freezer.
  4. Heat sesame oil in a pan and add garlic + vegetables. Let cook for 3-4 minutes, then add in the quinoa and cook for another 2-3 minutes.
  5. Make a well in the center and crack the eggs into the space. As the eggs cook/scramble, toss everything together and serve warm.

  1. I love the idea of quinoa for fried rice, those pictures have me craving fried rice now and its like 5am. LOL The first dish I ever made as a kid was french toast. I love breakfast food.

      That’s awesome! That might have been one of the first recipes my mom taught me! (It was either that or oatmeal!)

    Quinoa sounds like a reasonable substitute… When I was a kid, my mom made lots of one pot meals; some of them were tasty, but what I remembered most was that they didn’t make for good leftovers…😐 Too mushy! For that reason, when I make a one pot meal, I try to make just enough for one meal; no leftovers. Thanks for sharing what looks like a tasty, filling meal idea. 🎂

    1. Aww, I’m sorry to hear that! I tend to have to bulk cook just because I know I have a tendency to get lazier/busier during the week, hehe. Soups and chilis tend to reheat pretty well and make good leftovers! (It’s about the right weather for it too now! :] ) Maybe those would work out better? :]

  8. I’ve rarely made fried rice because of the need to make the rice ahead. I need to remember this when I have leftover quinoa — looks yummy and pretty quick.
