Protein French Toast

I adapted this from blogilates (I’d link the actual recipe on her site but I can’t find it anymore ;_; ). :O The only thing I really changed was throwing in 2 eggs instead of 3 egg whites, since I didn’t want to waste the yolks. There’s an option to make fruit puree for it too, which I didn’t do, because I already have a whole lot of awesomeness known as homemade apple butter + a variety of homemade jams because I have awesome friends. :X I’ll probably stick to making this on weekends, not because this isn’t quick, but because my usual go-to breakfast in the mornings these days is just protein muffins or some such similar substance that I baked up a batch of over the weekend. Convenient and quick. :O

Protein French Toast

Ingredients:
(Toast)
-2 slices whole wheat bread
-2 eggs
-1/8 cup Greek yogurt
-1/8 cup protein powder
-1 tablespoon coconut flour (optional, but highly recommended)
-1/2 teaspoon vanilla extract
-1/4 teaspoon cinnamon
(Fruit Puree)
-1/2 cup fresh fruit of your choice (all berries and peaches work really well)
2 tablespoons water
-5 drops liquid stevia or other sweetener

Instructions:
1) (Toast) Heat a non-stick skillet to medium heat and coat with coconut oil or cooking spray.
2) Mix all ingredients (excluding the bread) in a bowl and soak each piece of bread in it, turning until thoroughly coated on both sides.
3) Place bread slices in skillet and cook for ~4-5 minutes per side or until golden brown.
4) (Fruit Puree) Place all ingredients in a blender and puree until smooth.
