Pecan Sandies

So these were actually made a while ago (before Thanksgiving), but you know me and my scheduling posts way into the future! I was helping one of my friends at church to put together little cookie care packages, and managed to snag the recipe for one of em’ (pecan sandies!)!

While my church friend was distributing them the next day, she came across an elderly lady living in a trailer with no heater, so she went home and picked up the one she had at home to give to her. <3

I love the stickers I got to use to decorate the bags! :P (Someone please remind me to bring back a bunch of stickers to West Virginia for my last rotation in mid-April to mid-May. I’m going to be doing outpatient pediatrics, so it’ll be a perfect use!)

A lot of the staff/patients often think that I want to go into pediatrics when they see me interacting with kids. I suspect it’s because I act so much like a kid when I’m around em’. (They say I’m good with them, but this only happens in short bursts, haha.)

While pediatrics was one of my favorite rotations last year, family medicine remains my first love, and as it so happens, that also encompasses peds, so I am good to go!

But as usual, I digress:

I assume this came out of a cookbook somewhere, but please don’t ask me which one, because I have no idea.

This isn’t the healthiest recipe in the world, but…

  1. They are super tasty.
  2. It’s the holidays.
  3. They have nuts in em’ (yay for protein + healthy fats!).
  4. You can share em’ with loved ones.

Pecan Sandies

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tbsp water
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups finely chopped pecans, toasted
  • powdered sugar, for dusting

Instructions:

  1. In a large mixing bowl, beat batter with electric mixer on medium to high speed for 30 seconds. Add the 1/2 cup powdered sugar + beat til combined, scraping sides down occasionally. Beat in the water + vanilla til combined.
  2. Beat in as much of the flour as you can with the mixer + stir in any remaining flour + the pecans. Wrap dough + chill for 30-60 minutes or until firm enough to shape.
  3. Divide dough in half + shape each portion into a 5.5×2.5 in. log. Wrap logs in plastic wrap + chill for 2 hours or until firm.
  4. Preheat oven to 325 F and cut logs into 1/4-in. thick slices. Place them 1-in. apart on cookie sheets + bake for 12-15 minutes, or until bottoms are light brown. Transfer to wire racks + let cool.
  5. Sprinkle powdered sugar onto cookies.

End-of-Week-ish Recap!

  • I think my super-crazy travels are allllmost behind me!   1. I used pecans in my recipe today as well! They’re so good in Christmas treats, and these sandies look delicious! Gingerbread cookies are my favorite holiday dessert.
