Oven Baked Crispy Truffle Fries

Whenever I go back to California to visit home/friends/family, I tend to spend the entirety of my Tuesdays in Pleasanton with Bel. Our tradition generally consists of me sitting in on both her morning pole classes followed by lunch at a nearby restaurant.

This is basically how I discovered the existence of truffle fries back in 2011, and I’ve loved em’ ever since. Quite unfortunately, the place we went to for them doesn’t make them anymore (but why!?!), and I vowed to try to make them on my own someday.

Well, now’s the time, m’friends! I’ve finally managed to use the truffle oil that The French Farm sent me to recreate truffle fries (in a healthier way) and they are absolutely delicious!

I actually threw in the purple potatoes on a whim (translation: this is another one of my “let’s clean out the kitchen” recipes), but I love the pretty colors they added to this!

Oven Baked Crispy Truffle Fries

Prep Time10 minutes

Ingredients

  • 2 Russet potatoes cut into 1/3" fries
  • 2 purple potatoes cut into 1/3" fries
  • drizzle of EVOO
  • freshly ground black pepper to taste
  • sprinkle of sea salt to taste
  • 3 cloves garlic minced
  • drizzle of LeBlanc Truffle Oil
  • dried or fresh parsley, for garnish
  • grated Parmesan cheese to taste

Instructions

  • Preheat oven to 450 degrees.
  • Line a baking sheet with aluminum foil or parchment paper and place potatoes in a single layer onto the sheet. Drizzle with extra virgin olive oil + season with salt and pepper, to taste.
  • Gently toss to combine + place in oven for 30-35 minutes, or until crisp. Toss occasionally.
  • At 25-30 minutes, drizzle with truffle oil and garlic. Gently toss to combine.
  • Transfer fries to a large bowl and top with parsley and freshly grated Parmesan cheese (if desired).
  • Serve immediately!

Notes

Make sure the potatoes are in a single layer or they won't crisp up as much!

  9. I am a truffle JUNKIE! For real. I have to have them at every meal when we go to Alba (the home of truffles). We brought back a TON of truffle things too – salt, balsamic, olive oil, speck… all of it! That said, clearly I need to make these.
