Honey Sriracha Chicken

Back in February, I won the Oatmega/Al Dente Pasta giveaway over at The Nutritionist Reviews, and I’ve been wanting to make something with the pasta ever since! (Recipe adapted from here!)

Honey Sriracha Chicken

Ingredients:

  • 4 chicken breasts, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • pasta of choice

(Sauce)

  • 1 cup water
  • 3 tbsp Sriracha
  • 4 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1/8 cup brown sugar
  • 3 tbsp honey
  • 2 tbsp cornstarch + 2 tbsp cold water
  • crushed red pepper flakes (to taste)
  • sesame seeds, for garnish

Instructions:

  1. Add the chicken + cornstarch to a ziploc bag, then shake to coat.
  2. In a medium saucepan, combine the sauce ingredients (other than the 2 tbsp cornstarch + 2 tbsp water) and stir. Bring to a boil over medium heat, then quickly whisk in the cornstarch + water until dissolved. Reduce the heat to low.
  3. Add a little EVOO to a large pan over medium heat and add the chicken. Let cook until browned + chicken is cooked through and no longer pink in the middle. Add the sauce and stir to coat.
  4. Sprinkle with crushed pepper flakes and serve over pasta or rice.

  1. What is something people might be surprised to learn about you?
    I had major struggles with my basic science courses in college and barely scraped through organic chemistry. By “barely scraped through,” I do not mean an A- Asian-fail (tis a major pet peeve of mine).I once got an 18% on one of my ochem midterms and wanted to bike in front of a bus (but it wasn’t going fast enough). I ended up passing because a 30% was somehow still considered a C- (…), but my goodness, that was a freakishly demoralizing year.(How the hecks did I ever make it into medical school, you ask?) I think it was due to my persistence + super-severe upward trend (+ perhaps also my spahhkling personality)–I aced most of my upper division courses whilst still taking twice the usual number of courses, holding down a couple jobs, internships, + club officer positions, so it worked out!
  2. Have you had your 15 minutes of fame?
    I have not, but I am totally fine with that. I get really uncomfortable with being the center of attention, and enjoy flying under the radar whenever possible! How did I make it as a music performance major? Magic. :O
  3. Have you ever met someone famous?
    No one that I can recall!
  4. I feel the most beautiful when I’m ___________
    Helping others! Seeing the smiles on their faces brings me joy that is unparalleled by most other things in life (unless we’re talking about salmon sashimi; see #7 for details).
  5. Whatā€™s something you hope will never come back in style?
    I’d say Uggs with miniskirts, but I think that might still be a thing.
  6. What song reminds you of your high school years?
    I am a music fiend, so I’m gonna name artists instead of a single song. >> Something Corporate, Sugarcult, Relient K, Savage Garden, Ayumi Hamasaki, Utada Hikaru, Mika Nakashima, Olivia Lufkin, M2M, 98 degrees, Michelle Tumes, Linkin Park, Evanescence, Death Cab For Cutie, BB Mak, Michelle Branch, Sweetbox, Trish Thuy Trang, Devotion, Westlife, All 4 One…and I’m just gonna stop there, or this will be endless.
  7. If you could eat one dish for the rest of your life, what would it be?
    A ginormous bowl of salmon sashimi with avocado, fresh mango, and spinach or cucumbers on a bed of brown rice or quinoa!
  8. What is one place on your travel must-see bucket list?
    Fairy pools in the Isle of Skye (Scotland)! <3

  9. What is one race on your race bucket list?
    Save for the one and only race I’ve ever run (the Nike Women’s Half in 2010) I’m really not much for running. I want to do a Tough Mudder at some point in my life though!

    Oh em gee, I finished and didn’t die!

  10. What is one thing you did as a child that youā€™re embarrassed to look back on now?
    I was told as a child that I’d gain magical powers if I stared at the sun…does that count? :[

      Bahaha, isn’t it?! Someone else got a 2%, so I technically was doing 9x better than them. My professor would get put on probation each quarter for failing too many students. (sigh)

    1. Thanks, Shashi! I definitely have meals or days where I don’t eat as healthily! My current preceptor is all sorts of awesome and treats me to lunch every day ( :O!!!)–we may or may not have stuffed our faces at a KFC buffet earlier this week! :x

  10. You had me at Sriracha! Seriously, I love Sriracha so much. I’ve never thought to put honey with it, but after seeing it here, I have to try this recipe.

    Also, that really did surprise me that you didn’t do well in basic science classes! What?! I never got on the Ugg train. I bought some Ugg wannabees for super cheap a few years back so I could take my dogs out and my feet wouldn’t be freezing. Never got on the Uggs and mini-skirts train. That’s for sure. So many good bands in your list! Seriously, it just brought me back.

      I figured it might! Chemistry was where I was most often on the struggle-bus, but at least I wasn’t alone! (Misery loves company. ._.) My professor would get stuck on probation every quarter for failing too many students, but I managed to never actually fail any of her classes!

      Glad you weren’t ever on that train! :P And yeah, coming up with that list definitely sent me down memory lane! :]

    Yesss, I’ll be trying this out tomorrow. I may not be able to have my uncle’s bbq, but this will do nicely.

    And you know I love questions:

    1)What is something people might be surprised to learn about you?
    For most people, that I was really good at DDR. One of my co-workers found a video of me playing and in his words I “lost some street cred.”

    2)Have you had your 15 minutes of fame?
    I did, actually. There was a local morning news program (Good Day Sacramento if you ever heard of it) and I at least got some on screen time twice during my senior year of college. The first time I had saw them doing a segment on campus and I went o ttake a picture for my ex. The guy noticed me and said something along the lines of “hey, you’ll have to pay for those!” and then the camera guy turned around, saw me, and I gave a pouty face. I got asked a questions about some funny cause they were doing and I answered and all of that. I got a couple of texts calling me “stupid” in a playful manner. I think.

    The other time they were doing a promotion thing with free bowling for state workers who were furloughed. I convinced my buddy and then co-worker to wake up mega early and go to the bowling alley they were at. While he wasn’t too happy, we got there, did a short interview, told us of the contest to get the first strike for a prize, and as soon as they said go, I sprinted with the ball to our lane and chucked it as hard as I could. I got nine down and it felt underwhelming. They kept filming until one of us got a strike and then we got movie passes for a movie we really didn’t care about (another air bud puppies thing). I did a celebratory dance with the tv lady and my ex was only a little jealous, haha.

    3)Have you ever met someone famous?
    Well, yeah. I’ve met Mayors, senators, congressman, governors, lt. governors, b-list actors, a couple of a-list actors, athletes, and prominent business man. From Kevin Johnson and Ed Fong to Tim Brown and Richard Yniguez.

    4)I feel the most beautiful when Iā€™m ___________
    Also helping others, but I wouldn’t say beautiful, haha. I wouldn’t say esteemed either. Iono, I guess I just feel better?

    5)Whatā€™s something you hope will never come back in style?
    Most men’s fashion from the early 90s. Although I kinda wish Starter jackets were a thing again.

    6)What song reminds you of your high school years?
    There were two songs that my friends and I deemed the embodiment of our high school years. In Da Club – 50 Cent and Get Low – Ying-Yang Twins Feat. Lil Jon.

    7)If you could eat one dish for the rest of your life, what would it be?
    I’m going to also agree with you in living entirely on constant bowls of Poki. mmmmm…

    8)What is one place on your travel must-see bucket list?
    Akihabra in Japan.

    9)What is one race on your race bucket list?
    Like, any race? Probably anything that will let me race on Laguna Seca. I should get into Auto-Cross…

    10)What is one thing you did as a child that youā€™re embarrassed to look back on now?
    I took my favorite toys with me every chance I got. It took one 5th grade field trip with the 6th graders where I realized that I was the only one doing it, and it was kinda weird…

    1. OH EM GEE. Guess who’s finally responding!?!?!?

      I don’t think I’ve ever been super good at DDR (the thing would shift and I’d be jumping around on not-the-right-arrows :[ ), but I’ve always liked playing!

      That’s cool that you’ve had a brush with fame! :O I’m really uncomfortable with being the center of attention for anything, so I’m just gonna keep on coasting by, haha.

      Yeah, beautiful’s not really the word I would’ve chosen either. It does make me happy to help others though!

      I wants a bowl of that right now. :[ I think that may have to be my first meal when I get back to CA. :O!

      hahaha, when I was 7, I packed my stuffed animals in my carry-on suitcase so that they could come to Hong Kong with me! :P

    1. ALSO, the isle of skye is a magical place :) and I’m 100% with you on the uggs with miniskirts thing (though I do enjoy watching people try and navigate the snow with their uggs on… I don’t know why people wear them in serious winter, they have no traction.)
