Gigantic Meatballs

I got the main recipe from blogilates and made some adaptations based on what I did and didn’t have. Usually, I’ll make this over the weekend with 2 cups of brown rice and then portion it all out into a bunch of tupperwares so I’ll have meals ready for the entire week. They are wonderfully delicious, pretty quick to make (in terms of prep time), and also super healthy! :O Each batch made about 12, which was perfect, since I just portion each meatball into my muffin tin (it’s so much quicker/more convenient that way >_>). Each one is apparently under 90 calories and has ~14g of protein in it. :]

I wish the closest Asian market wasn’t over an hour away. These would probably taste even more amazing with sweet chili sauce, but oh well. I’ve been eating them with a side of brown rice and veggies.

Gigantic Meatballs


Ingredients:
(Turkey)
-2.5 lb lean ground turkey
-2 eggs
-1 cup rolled oats
-2 medium green bell peppers, chopped
-1 purple onion, chopped
-2 tbsp paprika
-1 tbsp garlic, minced
-1 tbsp dried basil
-1 tbsp dried oregano
(Beef)
-2 lb lean ground beef
-2 eggs
-1 cup rolled oats
-1/2 medium red bell pepper, chopped
-dried oregano
-dried basil
-garlic powder
-black pepper
-cayenne pepper

Instructions:
1) Preheat oven to 375 degrees.
2) Mix all the ingredients together in a giant bowl. Shape them into balls.
3) Bake for ~35 minutes (30 minutes would probably have been enough for the beef ones, shown below).
