Fresh Summer Fruit Pesto Salad

From at

http://www.fairyburger.com/wp-content/uploads/2017/06/summerfruitpestosalad.jpg

You'll Need...

  • 1-2 white nectarines, cut into bite-sized pieces
  • 16 oz strawberries, sliced
  • 6 oz blackberries
  • 1/2 cup red grapes
  • 1/4 cup fresh mozzarella, cut into bite-sized pieces
  • 1 1/2 tbsp La Favorita Pesto Genovese with Truffles
  • 1 1/2 white balsamic vinegar
  • 1 tsp EVOO
  • sprinkle of hemp hearts (to taste)

Directions

  1. Combine all fruits + mozzarella into a large bowl.
  2. Drizzle in pesto, white balsamic vinegar and extra virgin olive oil.
  3. Toss to combine.
  4. Sprinkle with hemp hearts and serve!

Additional Notes

This is super versatile and very much a "to taste"-type recipe. I like minimal amounts of dressing, so if that's not your preference, you can add more!
