Sweet Potato Dessert Nachos

Hi everyone! If you’re reading this on the actual morning of this post…I’m interviewing at a program I supersuper love and adore at the moment, so if you have a spare moment, please send some good thoughts or say a little prayer for me to be a more awesome version of myself!

I am stuck in a major dilemma at the moment, and have been duking out the whole risk-benefit ratio in my head and calling friends + family for advice. The silver lining is that it’s not a bad thing–it’s just that never in my life have I ever been much of a risk-taker, but I’m considering it because to not take that leap would mean an almost-definite shutting down of giving it any sort of a chance. (I know I’m sounding all secretive and stuffs, but I promise this will unfold by the time spring rolls around.)

In other news, I’m all sorts of ecstatic because…

  1. One of my favorite patients yesterday is doing a wholeeee ton better! :] He and his wife are super super cute together (celebrating their 51st anniversary soon!), and they told me they’d be praying for my interview today, and that I better report back if they were still there to let em’ know how it went! <3!
  2. One of my top-choice programs told me that I was in their top 5. :]!
  3. I was working with one of the residents yesterday evening on a new admit, and she told me she’d heard that I was really good with working with patients(!!) so she was going to let me take control and fulfill the terminology that is my current rotation (acting internship, aka act as an intern), so I interviewed the patient and let her know our thoughts and our plans, and she said I did a reallyreally great job! :D!

As usual, I’ve rambled enough. I’m playing some catch-up tomorrow for the monthly Ultimate Coffee Date (past ones located here!), so be sure to stop by, and let me know what’s been going on in your life!

Sweet Potato Dessert Nachos

Sweet Potato Dessert Nachos

Course: Dessert, Snack
Cuisine: American
Keyword: easy

Ingredients

  • 3 sweet potatoes cut into wedges
  • 2 tbsp extra virgin olive oil
  • 2-3 tbsp natural peanut butter or your choice of nut butter
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts chopped
  • 2-3 tsp Nektar Naturals honey crystals
  • 1 bar Divine dark chocolate bar
  • 1 tbsp cinnamon protein powder

Instructions

  • Preheat oven to 450 F.
  • Slice sweet potatoes into wedges, toss with EVOO and arrange in a single layer onto baking sheet.
  • Bake for 20 minutes, then flip and bake for another 10 minutes (or until golden brown). Let cool for 3-5 minutes.

Nut Butter Sauce

  • Add hot water to peanut butter (or whatever nut butter you used) and mix until pourable.

Chocolate Sauce

  • Microwave chocolate in 30-second increments until melted, then drizzle onto the sweet potato fries.
  • Top with dried cranberries and walnuts, then sprinkle on honey crystals and cinnamon protein powder.

    I’m not a risk taker either, so I understand your feelings.
    Do not overthink things. Connect to your Inner Self and listen to your heart. Pray or meditate depending on your beliefs.
    Not all opportunities are good, but many times, we have to trust the process and take leaps of faith.
    I’m wishing you wisdom to make the best decision for yourself.

  18. I totally missed that it was nacho day (probably because I am spending 18 hours a day on remodeling the house) or I would have had nachos for breakfast, lunch, dinner, and dessert!!
