Quinoa & Black Beans

I actually don’t have a new recipe for you this week, because although I presently don’t really have a kitchen to speak of. (Translation: I’m couch-surfing.)

I do still have a recipe involving beans, but I’ll get to it after this shameless solicitation/promotion:

My friend Scott is an air show pilot (youngest Mustang pilot in the world!) who created Quick Silver P-51 Air Shows with his father to showcase the historic P-51 Mustang (put together using parts from >250 Mustangs!) + to honor veterans and educate the public about those who served in WW2 to help give us the freedoms we have today.

Scott’s like another brother to me because his mom is none other than the super-awesome lady behind Please Save A Cat (aka my home in WV). I never had the chance to meet his dad because he passed away the month before I started volunteering there, but I hear stories often.

Scott’s is currently in the running in the Wells Fargo Works Project contest, and it’d be all sorts of awesome if he won! He and his mom are two of the kindest and most generous people I have ever known, and I’d love for him to be able to keep Quick Silver going, so I’d greatly appreciate it if you’d vote too! <3

Quinoa & Black Beans

I first made this back when I was in grad school, when I was about to move out to start med school. (I seem to always be in the middle of moving out/in and on a crusade to finish everything in my apartment/home before I go out to buy more food.)

This was another one of those recipes. And it was rather delicious, if I do say so myself! :O It was also super easy to make, very filling, and packed full of all sorts of awesome nutrients! :]
