German Potato Salad

Hello, m’friends! I’m probably off at my 4th interview over the last 7 days right now, so please send some good thoughts my way if you’re reading this on actual-November-13th-2015! I’m where I did my Family Medicine + Sports Medicine rotations back in August!

I’m also doing a whole crap ton of driving this weekend, so if you could send good thoughts my way for the weather as well, I’d really appreciate it! I drove through a massive rainstorm to get to my interviews earlier this week, and they definitely weren’t a lot of fun (the driving, not the interviews–the interviews were a lot of fun!). If I could teleport, this wouldn’t be an issue, but alas!

As far as portions go, aim for ~1 potato/person (aka if you have 4 people, use 4 potatoes)!

German Potato Salad

German Potato Salad

Course: Salad
Cuisine: German
Keyword: easy, quick

Ingredients

  • 6 red medium-sized potatoes cubed
  • 1/2 cup yellow mustard
  • 1/4 cup Greek yogurt
  • 1/2 cup sweet pickle relish
  • 1/4 cup onions diced
  • 1/2 cup celery diced
  • 1 green pepper diced
  • hardboiled eggs optional
  • salt to taste
  • freshly ground black pepper to taste
  • paprika to taste
  • garlic powder to taste

Instructions

  • Wash and boil potatoes, then cool and dice!
  • Add potatoes and all other ingredients into a large bowl (or ginormous Ziploc bag if you're on the run to a cookout). Mix well and serve!

Notes

(This can be served hot or cold!)

  11. I am so picky about potato salad! Ha, I guess allergies will do that!
    I have never thought about using yogurt in place of mayo! That is a great idea!
