Cauliflower Tots

Why hello! :O I’m currently on another audition rotation and it’s been a ton of fun thus far (despite the fact that I usually don’t even prefer inpatient medicine–I take this as a good sign!)!

The hours have been long (~12 hours/day), and I’m actually going to be working two “14”-hour shifts through the weekend, which means that yes, I will be working through both Halloween and the time change (hence the quotation marks). Ohhh well. Might as well get some practice in before residency starts, right?!

This recipe was also adapted from SkinnyTaste, and is the last of my super-super backdated recipes that’s been sitting in my drafts (I still have >100 drafts going at the moment ._.) for pretty much forever. I made this, along with the Avocado Mango Salsa and the Loaded Santa Fe Baked Sweet Potatoes back in September of last year (also known as the last time I got to go home. ;_; ).

We subbed in Parmesan instead of cheddar because back then, I was under the impression that I hated cheddar cheese. (I’ve since changed my mind, at least when it comes to Cabot’s cheddar cheese! :O Check out Farrah’s Hot Dates!)

Cauliflower Tots

Ingredients:

  • 4 cups cauliflower florets, cooked + mashed
  • 1 egg
  • 1/2 cup onion, minced
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • sea salt, to taste
  • freshly ground black pepper, to taste

Instructions:

  1. Preheat oven to 400.
  2. Cook cauliflower florets and steam in water, covered, for ~4-5 minutes or until tender. Drain and smash with a fork.
  3. Combine all ingredients into a bowl and mix.
  4. Spoon 1-tbsp of the mixture into your hands and roll into small ovals.
  5. Bake for 16-18 minutes, turning halfway through baking. When they’re a golden color, they’re done!

    Great use of cauliflower! It’s almost a low carb version of bubble & squeak. British dish made using left over veggies!
