Flan

We made this in February of this year for my facebook spouse’s birthday. (We’ve been married on facebook since July 9, 2006. ;) It ain’t official til it’s on facebook!) We lived together for all 4 years of our undergrad years at Davis!Ā Good times were had by all, and I really miss our living situation back then.

Ever since, I’ve been a little wary of having any roommates or housemates because when it’s that good, the only way to go is…down. (I thankfully lucked out with my current roommates in grad school too, since they’re all really nice, but it’s still a legitimate concern. I’m pretty sure I won’t be chancing it in medical school, because sanity is just a tad important.)

This flan recipe is super super simple, and only takes a grand total of 4 ingredients to make! (I am all for quick and easy recipes when it comes to cooking!)

4-Ingredient Flan

Ingredients:

  • 2 (12 oz.) cans of evaporated milk
  • 1 cup sugar
  • 6 large eggs
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350Ā°F. Find an oven-safe container that can easily fit into another. (The larger one will be for the water bath. Fill it about 3/4 full with water.)
  2. In a large pan, use a wooden spoon to caramelize the sugar until it’s a light golden brown.
  3. While still hot, transfer the caramelized sugar into the container, swirling it until it completely covers the bottom.
  4. Combine the eggs, evaporated milk and sugar in a separate bowl. Mix until smooth, and add vanilla extract before pouring the custard mixture into the pan containing the caramel.
  5. Bake for about an hour (or until center passes toothpick test). Remove from oven and allow to cool on rack. Invert onto a serving dish.
