Curried Chickpeas & Spinach

Installment #2 on my cooking adventures with Hira! This whole getting together on the weekend to make a ton of food is working out pretty darn well for the both of us! Our combined pantries are slowly starting to dwindle, so I think we’re on to something here. :O Recipe adapted from here!

Curried Chickpeas & Spinach

Makes 10 servings! Each serving = 189 calories, 4g fat, 31g carbohydrates, 10g protein, 9g fiber, 411mg sodium, 7g sugar!

Ingredients:

  • 1 tbsp EVOO
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 in. fresh ginger, grated OR 1 frozen ginger cube
  • 1 1/2 tbsp mild curry powder
  • 1/4 cup water
  • 8 oz. fresh spinach (can also be frozen)
  • 1 can (15 oz.) tomato sauce with mushrooms
  • 1 can (29 oz.) chickpeas
  • 6 oz. frozen peas

Instructions:

  1. Dice the onion, mince the garlic, and grate the ginger (or use a frozen ginger cube or ground ginger). Saute in a large skillet with the EVOO over medium heat until onions have softened. (~3-5 minutes)
  2. Add curry powder and continue to saute for ~1 minute, then add water into skillet with spinach and saute until spinach has wilted. (If using frozen spinach, don’t add the water!) Add in the frozen peas.
  3. Drain and rinse chickpeas and add to skillet along with tomato sauce. Stir well to distribute spices and heat throughout. (~5 minutes)
  4. Serve with naan, bread or over rice!

    1. It’s hard to decide between all the delicious-lookin’ recipes out there! I’ve been wanting to make a healthy pumpkin pie milkshake but can’t really decide what I want to base it off of, haha. :p
