Crockpot Oatmeal Protein Bars

Over the past few months, I’ve been all about crockpot recipes and rice cooker recipes–it just saves me so much time! *-*

Quite unfortunately, I’m going to have veryyyy little time over the next 3.5-ish months to blog because I’ll be on all inpatient rotations and working 6-7 days/week with 12-14+ hour shifts at a time. Am I looking forward to this in the slightest bit? No, not at all, but I’m just going to think of it as a rite of passage as an intern, and hopefully I’ll get a whole ton of learning in!

I made these during the summer when it was still wayyy too hot to turn on my oven. (I was trying to save money so I wasn’t using the AC and the thought of adding to that heat with the oven was just a no-go.) The things I do to save money…but at least it forces me to get creative?!

These are super simple to make and very, very versatile, but I’d definitely recommend lining your crockpot with parchment paper if you don’t want an easy cleanup afterward (aka please learn from my mistakes)!

Crockpot Oatmeal Protein Bars

You'll Need...

  • 2 eggs
  • 1/2 tsp almond extract
  • 1 large banana, mashed
  • 1 1/2 cups unsweetened vanilla soy milk
  • 1 1/2 cups rolled oats
  • 1 1/2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 cup Bob's Red Mill vanilla nutritional booster
  • 2-3 tbsp butterscotch chips
  • 2-3 tbsp dried cranberries
  • 2-3 tbsp shredded unsweetened coconut

Directions

  1. Mix everything together in a large bowl.
  2. Sprinkle with additional toppings, if desired.
  3. Cook on low for 8 hours.
