Crockpot Honey Sriracha Chicken

I’ve always been a fan of easy/quick/healthy recipes, but ever since residency started, this has only compounded. My rice cooker, blender, and crockpot are probably what I’d call “the big guns” in terms of kitchen contraptions that I use most often. They make my life so much more convenient!

This recipe mostly came into being because they were all ingredients that I had an excess of. As I did all throughout med school, I’ve been continuing my weekend meal prepping so my lunches throughout the week have been fairly simple–brown rice or quinoa with steamed veggies (thanks, rice cooker) and…protein, which is where this recipe comes in! :D

(In this case, I included apple slices just because I had lots left from apple picking. :] You can pair this with whatever greens you happen to have!)

You'll Need...

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp sriracha (or more, depending on your preference)
  • 2 tbsp scallions (optional, for garnish)
  • 1-2 tsp sesame seeds (optional, for garnish)

Directions

  1. In a small bowl, mix together the soy sauce, honey and sriracha.
  2. Add chicken thighs to crockpot and pour in the honey mixture.
  3. Cover and cook on low heat for 3.5 hours or high heat for 1.5 hours.
  4. Garnish with scallions and sesame seeds, if desired.

    1. It’s just slightly spicy to me–you can always adjust how much sriracha you put in it though if you don’t like spicy! :]!

  7. This looks so delicious! I’m weird and don’t like anything other than chicken breast, however, I bet this marinade would work on them too!
