Creamy Vegetarian Chowder

Much as I’m disliking the cold, I do love this season because of all the delicious comfort foods that I can now enjoy! (Yay for soup and chili weather!) I am all about the warm,dishes and mugs of hot tea (plus my heated blanket) during this time of the year!

Corn chowder is one of my favorite soups in the world. This creation was courtesy of Linda when I went back to Lewisburg to visit earlier last month! She made a huge vat of it but we decimated it pretty quickly. *-* Back when I lived with my best friends in college, the chowder would never last long either.

Creamy Vegetarian Chowder

Course: Appetizer, Soup
Cuisine: Multicultural
Keyword: healthy, vegetarian
Servings: 2 quarts

Ingredients

  • 1 medium red onion chopped
  • 5 stalks celery chopped
  • 2 cloves fresh garlic minced
  • 1 tbsp avocado oil
  • 8 small red potatoes chopped
  • 4-5 mini bell peppers sliced
  • 1 8 oz bag corn
  • 1 box organic vegetable broth
  • 1/2 cup Homestead Creamery 2% milk
  • 1/2 cup sour cream
  • sea salt to taste
  • freshly ground black pepper to taste
  • fresh cilantro for garnish
  • 1 avocado chopped

Instructions

  • In a large pot, saute onion, celery + garlic together with avocado oil. Add the potatoes + bell pepper and let cook until soft, then add the corn.
  • Pour in vegetable broth and milk together* and cook until it comes to a boil.
  • Season with salt and pepper.
  • Mix in sour cream just before serving and top with fresh avocado.

Notes

*Avoid adding milk to heated broth!
