Coconut Curry Daikon

To my knowledge, I’ve never used daikon in a recipe on here yet, so what better time than now to start?!

Daikon (also know as Chinese white radish, or “lobak” in Cantonese) is a mild-flavored winter radish. It basically looks like a ginormous white carrot, and has lots of vitamin C in it!

You may have noticed by now that I’m a huge fan of coconut and/or curry anything (in case you’re wondering, I love and adore Thai food), so why not combine the two to make Coconut Curry Daikon? This makes for a super easy, healthy + quick snack or appetizer! :] You can serve it over rice if you want!

Coconut Curry Daikon

Ingredients:

  • 3 cups daikon, cut into matchsticks
  • splash of coconut milk
  • 1 cup shijimi mushrooms
  • 1/2 – 1 tbsp butter
  • sprinkle of sea salt
  • freshly ground black pepper
  • sprinkle of turmeric
  • fresh green onion (optional)

Instructions:

  1. Add butter to medium skillet and heat to medium-high, then stir in coconut milk.
  2. Add daikon and mushrooms and cook until tender.
  3. Add sea salt, pepper, and turmeric, and mix until well combined.
  4. Garnish with fresh green onion, if desired.
  5. Serve hot!

  8. The only time I eat daikon is at dim sum haha. You know those square daikon cakes with the diced Chinese sausage? My weakness :P

  10. Awesome combination of some of your favorite ingredients! I just had some yummy pickled daikon at a new Korean restaurant. They serve it on the side with crispy fried chicken- delish!
