Coconut Curry Basmati Brown Rice

This was kinda a hard one because it forced me to choose between my beloved rice cooker vs. my slow cooker! :/

As it happens, my first-world rice cooker (NS-TSC10 5.5-Cup Micom Rice Cooker & Warmer [affiliate link!]) won the throwdown (but it doesn’t make me love my slow cooker any less!) because it’s stuck with me through thick and thin–it made its first debut back in July-ish of 2012, right before I started medical school. (Time sure flies!! Now I’m done with med school and in my 2nd year of residency! :O )

Translation: it’s my 5th(!) year of owning this wondrous contraption. I don’t think I’d ever truly need anything else because it’s so darn versatile.

 

Zojirushi Rice Cooker

Rice cookers are a vital staple to any Asian household.

…yes, I know I live alone (aside from the Muffin <3), but I’m still going to count myself as a household because I can eat enough to feed a small family.

You can also use it to make mixed rice, sweet rice, porridge…the options are endless! <3 It also comes with a BPA-free steaming basket, a rice measuring cup, nonstick rice spatula, and a spatula holder that attaches to the rice cooker. I used to bake cakes for friends with this one, and have also used it to make sushi rice for onigiri! It can technically function as a slow cooker (I just haven’t gotten around to using it for that yet) too! The cord is retractable and the parts (steamer basket, inner lid, inner cooking bowl) are all detachable for easy cleaning.

You'll Need...

  • 2 cups uncooked basmati brown rice
  • ~1 3/4 cans coconut milk*
  • 2 tbsp green curry paste
  • 1/4 cup unsweetened dried coconut flakes
  • 1 cup frozen vegetables

Directions

  1. Add uncooked basmati rice to rice cooker with 1 cup of cold water. Swirl + rinse rice in water, then drain.
  2. Pour in coconut milk and add curry paste + coconut flakes. Mix together.
  3. Choose the "brown rice" option** on your rice cooker and press "Start."
  4. About 15 minutes before your rice is ready, add frozen vegetables to steamer basket and place into rice cooker.
  5. Mix the rice and vegetables together, then top with desired spices and serve!

Additional Notes

*The rice cooker has lines in the bowl to show you how much liquid to add per cup of rice that you put in!
**If you don't have a "brown rice" feature, you should be able to get by with adding enough liquid to fill to the "3 cup" mark instead of the 2 cup mark.
You can definitely add more than 1 cup of veggies, but I didn't want to overload the steamer tray.

    1. I don’t see why not! You’ll probably have to steam more vegetables, but other than that, this should work just fine!

  2. I have always wanted a rice cooker and never gotten one- with all my contraptions and no where to put them all, I may have to delay getting one though! My favorite is the ice cream maker I have, but the most used has got to be my slow-cooker for sure- as in weekly! That rice looks amazing- going to try in a pot!

    1. I feel ya! I probably have way too many kitchen contraptions too, which is why I haven’t jumped onto the Instant Pot bandwagon yet (it was cool to get to use my friend’s though!).

    1. Hi! It’s definitely been my favorite for lunch lately (I’ve been adding some honey BBQ chicken for protein! :P )! Fresh veggies would definitely work–I just mostly have frozen around because I can’t get through fresh produce quickly enough! Just don’t steam it quite as long as I did. :]!
