Chocolate Mochi Waffles

You’re all probably already well aware that I love and adore breakfast food (let’s face it, how can you not *-*)–I recently unearthed my mini waffle maker (it’s the cutest thing ever, and only cost $6 at TJ Maxx! :O!), so what better a time than now to make waffles again?!

After the success that was our Peanut Mochi from late last year, my friend and I wanted to try out some more kitchen experimentations with glutinous rice flour since I still have a couple bags left. Thus, we bring you…chocolate mochi waffles! :D

If you’ve never had mochi waffles, now would be a great time to try em’! <3 These are a lot chewier than your regular crisp waffle, and just as delicious!

Originally, we were going to make matcha waffles but since we’d made another matcha dessert already (recipe to appear shortly!), we figured we’d change up the flavors a bit!

We decided to top em’ with some maple syrup, dried fruit (blueberries, cherries + cranberries) and hemp hearts, but you can do whatever the hecks you want! #youdoyou

Chocolate Mochi Waffles

Ever heard of "moffles" (mochi waffles)? Try making your own at home!
Prep Time10 minutes

Ingredients

Waffles

  • 1/2 cup glutinous rice flour
  • 1/2 cup water
  • 1 cup glutinous rice flour
  • 1/2 cup coconut sugar
  • 2 tbsp coconut flour
  • 1/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • sprinkle of salt
  • 1 cup coconut milk
  • 2 tbsp vegan butter* or coconut oil
  • 2 eggs or flax eggs** for vegan option
  • 1 tsp vanilla extract

Toppings (Optional)

  • hemp hearts
  • dried berries
  • maple syrup

Instructions

  • Combine 1/2 cup glutinous rice flour with water in a bowl and stir until mixed well. Microwave for 30-60sec until the mixture reaches a gummy-like consistency.
  • Add 1 cup glutinous rice flour, sugar, coconut flour, cocoa powder, baking powder and salt into a large mixing bowl and stir together. Then add mochi mixture, coconut milk, vegan butter, eggs + vanilla and mix until well combined.
  • Heat up waffle maker and spray with non-stick spray. Pour in batter and cook until fluffy!

Notes

*I used Earth Balance, but Barlean's butter-flavored coconut oil would work just as well!
**Flax "egg" = 1 tbsp flax seeds + 2-3 tbsp water

    1. Mochi is basically like a sticky rice cake common in Asian desserts + made of glutinous rice flour. :] If you use the glutinous rice flour in waffle batter, it makes em’ chewier!
