Chicken Avocado Burritos

Before I get to that, however, please allow me to regale you with my tales of terror from the weekend before last, where I was trying (to no avail) to sign up for the second part of my boards licensing exams to become a physician. :'[

Level 2 has two parts to it. CK (Clinical Knowledge) is $580, and PE (Physical Examination), where they force you to fly all the way out to Philly to take the test, is $1290. My credit limit was apparently freakishly low, so because I spotted my friend on his test because he needed to wait for reimbursements in order to pay for it…and in so doing, I couldn’t pay for the second part of my test.

As I was silently freaking out (whilst watching available test dates disappearing by the day), I called my bank to see if they’d increase my credit limit. Here’s how you should never speak to your bank!

BoA: What’s your annual income?
F: Um, probably zero? Unless you count imaginary government money. I’m on student loans.
BoA: Do you have any sort of part-time job or anything?
F: I’m in medical school, so they don’t really let us work.
BoA: Are you a freshman, sophomore, junior…?
F: It’s my third year.
BoA: Are you self-employed?
F: Um. As a full-time student?
BoA: Is there any side income that you bring in with your hobbies?
F: Believe me, I really wish I did.
BoA: So you would be an investment.
F: Yes, yes I would be.

They extended it instantly, so I guess I’ve got that going for me. On to the food!

I’ve never actually rolled a burrito in my life until now. (I always figured I’d have a hard time because I would want to over-stuff it, so meh.) Hope you enjoy these though! :D Recipe adapted from here!

If you don’t feel like eating it in burrito form, this could just as easily be turned it into a sandwich (or a salad if you omit the tortilla!).

Chicken Avocado Burritos

You'll Need...

  • 1 15 oz. can of shredded chicken
  • 2 packets of grilled chicken
  • 1 1/2 tbsp deli mustard
  • 1/2 cup pepper jack cheese, shredded
  • 1/4 cup mozzarella cheese, shredded
  • freshly ground black pepper, to taste
  • 1 avocado, diced
  • 2 tbsp cilantro, chopped
  • ~1/4 cup 0% Fage Greek yogurt
  • 4-6 whole wheat tortilla wraps
  • Your choice of copious amounts of hot sauce*

Directions

  1. Combine chicken with pepper and mustard. Mix well, then add cheese, cilantro, avocados and Greek yogurt.
  2. Heat tortilla in a pan for 1-2 minutes on each side on medium-high heat. Flip to other side and cook for another minute.
  3. Add chicken filling to the tortilla, drizzle with your choice of hot sauce, and roll it up!

Additional Notes

I've tried Tapatio & Sriracha thus far and it was like having a delicious fire in my mouth. <3

  7. We eat food burrito-style in this house quite frequently. Burritos are so versatile and you can totally throw some of the amazing leftovers we all have in our refrigerators in there.

  11. oh my goodness my mouth is watering. Cheese, avocados, and tortillas are pretty much the ‘food groups’ I miss the most! :) And your conversation with the bank made me laugh. I know you are a very worthwhile investment for them! I had the hardest time even getting approved for a credit card because I didn’t think to apply for one until I was no longer in college, so I missed out on the credit cards for college students. Banks apparently don’t think very highly of offering credit to a B.A. who has never had any debt/credit history and has no actual job (at the time–I didn’t get a job after college because we were planning on moving). Finally we found one that would give me a credit card based on Angel’s history!

    1. I think I’m way too honest for my own good, haha. When I told my friend about that conversation, she told me to just let her talk to them for me from now on. :x When I was fully awake later and thought about what I’d said, I gotta say–someone up there is definitely watching over me, haha. ._.

      Oh gosh, I’m so sorry! That definitely makes it eons harder. :[! Most of my jobs in undergrad were paid under the table (hooray for self employment!), but I got one in the beginning just to attempt to build my credit. I’m super glad you managed to find one! Yay for Angel! :D

  12. Oh Farrah, I laughed so hard at this conversation! Even funnier that they just were all “Sweet, totally done.” I love it! It’s a little frustrating that you get a credit card more easily when you OWE money than when you owe nothing, so I’m glad it went smoothly. :)

    Chicken burritos are one of my husband’s absolutely favourite things. Mexican meals are a big hit in our house because it’s so easy to make vegan ones for me, and his meaty ones at the same time.

    1. It honestly makes no sense at all (not that I’m complaining, because I definitely needed it for that lovely transaction). My theory is that they’d get to capitalize on all my future paychecks if I ended up in credit card debt or some such monstrosity. :O

      <3! Burritos are definitely one of my favorite meals because they're just so darn versatile. (I probably use the word "burrito" very loosely, haha. If I throw anything into a wrap and roll it up, it's basically a burrito to me. :x

    These burriots look amazing- I wonder how I would do rolling a burrito? I’m sure it would fall apart haha! My recipe really isn’t hot or spicy but I was so excited that I actually made something I had to link up anyway ;-)
