Che Thai (Fruit Cocktail in Coconut Milk)

I know it’s not actually Friday anymore, but you’ll have to excuse my tardiness in writing this post. Life has been kinda packed lately (not to worry, they’re mostly good things! :] ), so I’ve been neglecting my blog. I’m also combining Foodie Friday this/next week with The Recipe ReDux!

Hopefully I’ll figure out how to balance everything again soon (it’s my specialty, right?!), but in the meantime, thanks for bearing with me!

We had a potluck yesterday where we were supposed to bring a culturally-inspired dish from whatever background we were from. Naturally for me, this would be something Chinese, and believe me, I had great plans to be super awesome and make Peanut Mochi (糯米糍), but…I slacked off and did not. (It’s been a really tiring week.)

Our latest Recipe ReDux challenge was via Libby’s Fruits & Vegetables–to create quick + healthy recipes using canned fruits/vegetables and something from Google’s 2016 Food Trends list. You probably already know that I’m somewhat of a coconut fiend, so obviously, coconut milk had to be involved!

I also included jackfruit because I wanted to try recreating the fruity dessert drinks (they could honestly go in either category) that I’ve come across time and again as a result of growing up in the bay area. I figured it was about time I made the attempt!

I’m told on a fairly regular basis that I don’t look 100% Chinese anyway (I think the top contenders = mixed vs. Vietnamese), so I decided to borrow from another culture–in this case, Vietnamese!

This is likely one of the easiest recipes ever, and it’s pretty healthy too (fruits + coconut milk)–you can treat it like a drink with delicious surprises or as a refreshing fruity dessert. :] I didn’t even need to use any sweeteners because Libby’s Fruit Cocktail is in 100% fruit juice instead of syrup!

Che Thai (Fruit Cocktail in Coconut Milk)

Che Thai is a light + refreshing Vietnamese dessert that consists of mixed fruit + coconut milk--perfect for a hot summer day!

Ingredients

  • 1 can coconut milk
  • 1 can Libby's Mixed Fruit Cocktail
  • 1 jar nata de coco coconut jelly
  • 1 can lychee or longan
  • 1 can toddy palm seeds with jackfruit

Instructions

  • Drain the coconut jelly, lychee/longan and toddy palm seeds with jackfruit into a container.
  • Mix together with coconut milk and mixed fruit cocktail (including juice).
  • Chill for 1-2 hours before serving.

Since I live alone, I kinda tend to stock up on frozen or canned fruits/veggies because…well, much as I may love fresh fruits/veggies, they don’t keep for too long, and I can’t eat that quickly. This ensures that I decrease my potential food waste and makes sure that I still get my fruits and veggie servings in for the day! :] (I’m currently on my outpatient pediatrics rotation, so I’ve been doing a lottttt of nutrition counseling lately.)

In the past, I’ve also used Libby’s vegetables to make Spiced + Stuffed Samosa “Baked” Potatoes and Mixed Vegetable Soup! They definitely make a super nice addition/option for making a quick and healthy meal, appetizer or snack! I still have a few more cans of fruit left, so I’m definitely looking forward to experimenting more with em’!

  2. Oh gosh, I’m all about anything cold in the summer. I love ice cream but it makes me sick now so no ice cream for me…sigh. I pinned this for later though! I might have to try it out. It sounds great. :)

    I have a friend that is Filipino but I feel like a lot of people don’t even notice when they look at her!

  3. I used to drink Chai Thai Lattes and loved them. I’ve never had Che Thai, I know it’s nothing like chai thai but it sounds alike :) Sadly I’ve been neglecting my blog a little also, my schedule has been so crazy, it’s hard to get everything done. I’m going to make this Che Thai! Thank you for sharing.

  4. Ha people never know what ethnicity I am (Chinese/Dutch). And this recipe looks delish — brings back memories of eating this sort of thing sitting on a tiny stool in a night market in Vietnam. You’re always so creative!

  6. This is such a creative idea. Growing up we always had cans of fruit cocktail at home for fruit salads or when we made Filipino dishes. Love your simple yet amazing ideas. And congratulations on getting accepted into another medical school. We saw in your recent post but comments were disabled so wanted to congratulate you on that as well!
