Banana Pecan Muffins

Back when I was living with my friend for my first away rotation, my friend threatened to kick me out of said lodging if I didn’t make the banana muffins I’d said I’d make.

Alright, fine. I’m just kidding.

She didn’t actually threaten to throw me out, but she did tell me she wished I’d make em’. We’d embarked on a very ambitious mission to finish off a ton of our kitchen items since both of us were moving out of our respective apartments in about 3 months. Hence, theseĀ  “let’s-use-up-everything” Banana Pecan Muffins were born! :]

This makes 6 ginormous muffins + a tinytiny loaf! (It’d probably translate to just over 12 regular-sized muffins.)

Banana Pecan Muffins

bananapecanmuffinsIngredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup coconut flour
  • 1 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 1/2 cup 0% Fage Greek yogurt (plain)
  • 3 overripe bananas, mashed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/2 cup honey (or to taste)
  • 1/2 cup pecans, chopped

Instructions:

  1. Combine all ingredients into a large mixing bowl and whisk together until smooth.
  2. Divide the batter evenly among the baking cups/pan.
  3. Bake until it passes the toothpick test, or ~30 minutes.
  4. Cool for 5 minutes before removing from pan. Serve warm! (Can be stored in an airtight container for up to 4 days!)

  7. I’ve never baked with coconut flour— where did you find it?! We love banana muffins in our house. I’ll definitely have to try adding pecans next time!

    1. I got it from Kroger, but if your local grocery store doesn’t have it, I really love Amazon, because they sell everything! <3!

    You’ve has quite the week. These banana pecan muffins are a good way to end it. When does your next rotation start?

    1. It starts tomorrow! :O I’m on Internal Medicine and then bam! Done with third year! (And on to boards study hibernation. what fun, what fun. x_x)
