Asado a la Plaza

I had this for dinner when I was staying over at Nadia’s in socal. I miss her cooking like no other. ;_; After consuming this, I kinda decided that I had to have the recipe (if only I had a crock pot though :O…). It is full of awesome and on the light side, so you don’t feel like you need to roll out the door even if you’ve eaten a ton of it. :O This recipe was taken verbatim from Nadia because she was supah cool and emailed it to me. <3 Nadia I love you. <3

Asado a la Plaza

Ingredients:

  • 2 lbs. beef skirt steak or corn beef (FYI 2 lbs. will probably only feed you as you already saw at my house; if you want for more people/days, probably get 4-6 lbs)
  • 1/2 onion
  • garlic cloves
  • salt
  • pepper
  • water
  • tomato puree
  • potatoes
  • lettuce

Instructions:

  1. Place the meat in the crock pot. Add onion and garlic cloves. Fill pot up with water and add some salt and pepper. Set it on high and let it cook overnight.
  2. Take the meat out and keep the stock.
  3. Shred the beef and set it aside.
  4. Place the stock in a blender (with the onion and garlic cloves) and add a small can of tomato puree. Blend it.
  5. Chop the potatoes in cubes and lightly fry them until fully cooked. Take potatoes out and set aside.
  6. With the oil that is left over from the potatoes, slightly fry the meat.
  7. Slice and clean the lettuce.
  8. EAT IT ALL!!
