Welcome toĀ Foodie Friday! I’m trying to go back to weekly recipes since I have so many that have been sitting on the backburner for ages. We’ll see how long I’m able to keep this up, but today, it’s gonna be these Air Fryer Roasted Vegetables!

Fun fact–our oven died some time ago so I’m really glad we still have an air fryer! (To be more accurate, it’s not actually dead, but it doesn’t know how to turn off anymore unless we shut off power to the entire house, so…yeah. Guess I won’t be participating in quarantine-baking anytime soon. I guess it’s just as well because Mossy #2, my sourdough starter, died in the move from NJ back to CA.)

About a month before shelter in place was in existence, my friends and I hiked Mount Tam (will get to that somewhere next year as my road trip posts are gonna take up all of this year and part of 2021…) and went to a restaurant in Sausalito called Fish. (Spoiler alert: their food is amazing. AMAZING.)

We were especially inspired by their Brussels sprouts, which led us to decide to try experimenting with my air fryer for the first time. Since the restaurant’s kinda far from us, we someday hope to recreate their version of them, but today is not that day. In time, m’friends, but in the meantime, you get an assortment of roasted vegetables instead!

Air Fryer Roasted Vegetables

Trying to find more ways to use your air fryer? Make these super simple + flavorful roasted vegetables!

Equipment

  • air fryer

Ingredients

  • sliced/diced vegetables we used ~2 cups rainbow carrots, 1 cup broccoli, 1 cup mushrooms, 1 cup Brussels sprouts
  • extra virgin olive oil
  • freshly ground black pepper
  • sea salt

Instructions

  • Preheat your air fryer to 360 degrees.
  • Add vegetables into a bowl and toss with extra virgin olive oil and desired seasoning to coat.
  • Line air fryer basket with parchment paper and arrange vegetables* in the basket.
  • Cook for 10 minutes**, stirring every 5 minutes.

Notes

  • *Try to avoid letting them touch! Gotta socially distance your veggies too. Although obviously not six feet. A couple millimeters will do.
  • **If you're cooking more firm vegetables (e.g. sweet potatoes, carrots, etc., cook for 15 minutes!

P.S. If you want to get more fancy (we only used salt/pepper), you can try adding smoked paprika, Italian seasoning, etc.! We decided to keep it simple this time around!

  2. Such a great idea! I have used the air fryer for potatoes and brussel sprouts but that’s it so far. I’m definitely going to experiment with other veggies, especially broccoli!

  5. And just like that, I think I need an air fryer. We got one for my parents, but never for ourselves. They love it, especially, because my stepdad loves fried food and this makes it so much healthier for him.

  8. Hmmm, I don’t have an air fryer. Is it worth it to get one when I have everything else except that? We have a much smaller kitchen now that we moved into a new place as well. In any case, I normally don’t like roasted veggies but your recipe makes them look delish.

    1. Ahh, that’s a hard one. If you like fried foods and want a way to make healthier versions of em’, I think it’d be worth it! Otherwise, having a small kitchen and less space for storage makes it harder and might add to the clutter/having even less space, if you’re not going to be using it much. You can always roast in the oven! :]

    LOVE LOVE LOVE the beautiful medley of vegetables you used. But even more so, the fact you resorted to simple seasonings to let the vegetable flavors shine is a really big plus in my house too! olive oil, salt and pepper :D yum.
