(This post was originally published on 1/20/14!)Ā Yesterday was technically the first day of spring but apparently we’re under what’s considered a state emergency in terms of the weather and all the state offices are closed…which means that for the second time ever since the start of residency, I get to have a snow day!! :O! (I’ve worked every single one prior to this.)

I’ve been over winter though before it even started though, so as happy as I am to have a snow day to catch up on life, I’m also very much ready for warmer weather so I can start my outdoor explorations again. *-*

I had something like this back in October while I was in San DiegoĀ [many years ago] and have been wanting to recreate it ever since. When I went home over break, I managed to locate acai smoothie packs at the local Sprouts (I am in love with that store; I think I’ve become a total hipster in terms of food. sigh.), so I got creative with whatever we already had at home.

This was my first attempt and I probably added way too much coconut water (it’s so expensive outside of Asian markets ;_; ). I believe this shall improve with time though! :O

You'll Need...

  • 1 Sambazon unsweetened acai smoothie pack
  • Ā½ can coconut water with pulp
  • 2 handfuls (~1/2 cup) frozen berries
  • fresh blackberries
  • almonds
  • 1 clementine, peeled
  • Ā¼ cup Dorset "Berries & Cherries" muesli (or your choice of granola/muesli!)

Directions

  1. Run smoothie pack under warm water for ~5 seconds.
  2. Blend acai smoothie pack with frozen berries + coconut water until it reaches your desired consistency.
  3. Pour/scoop into a bowl and top with fresh blackberries, almonds, clementines + muesli.

  7. Oh, this looks yummy with all the berries in there! I have never seem acai smoothie packs in the store…are they very common?

    1. They’re not super super common but health food stores (e.g. Sprouts, Trader Joe’s, Whole Foods, and the like) tend to have them! <3!

  10. Hi Farrah! I used to make Acai Bowls all the time but somehow I stopped, you just inspired me to get back on the Acai Bowl train. Enjoy your snow day! I wonder if the hospitals get busier during storms. I love the addition of black berries, and clementine :)

  12. I’ve never had Acai before- can you believe it?! Ha! It is a fruit though and sadly that’s a no-go with me. But this bowl certainly looks like a quick and healthy alternative to other snacks one could have!! :)

  17. yay snow day for you! my mom is a nurse and all growing up she always always had to trek to work – no matter what – as far as the smoothie bowl – I have SEEN acai packets but am uncertain IF I would like them – it’s a fruit, but I am unsure of the flavor….but I AM OVER WINTER WEATHER TOO – hang in there :)

      I wish I could describe the overall taste to you, but I've only ever had it mixed in with other fruits, so I'm actually not sure what it tastes like on its own, haha.
