Vegan French Toast

I’m still on my “old recipe revival” kick, partly because I’ve been super busy and haven’t been cooking, and partly because I’ve been lazy tired/uninspired. This recipe was actually first published way back in December of 2013! :O Adapted from here.

The changes I made were really just because I dislike using salt and I didn’t happen to have any nutmeg. This does indeed have an egg-y sort of taste to it despite there not being any in it. I bought a tapioca loaf the other day (it was on sale and I was curious) so I used that. :]

This past Wednesday was actually the first time I’ve gone grocery shopping in…at least a month and a half(?). Who even knows anymore? I met with a financial advisor last week in an attempt to get my life together (this adulting thing still sucks) and was told that I am saving my paychecks so well that I “could afford to spend (x amount) with reckless abandon if [I] wanted to.” Direct quote.

We had a good laugh, and I proceeded to drive 7.5 hours over the weekend to to celebrate my birthday on the top of a mountain we climbed and at Please Save A Cat! <3 Case in point–I have a ton of travel posts coming up. A tonnnnn. (As long as I don’t end up procrastinating like I did with the Scotland posts… >_> )

The original recipe called for 6 slices of bread, but I had enough left over for the whole loaf, so why the hell not, right? :O Waste not!

Vegan French Toast

You'll Need...

  • 1 cup unsweetened Almond Breeze Almond Milk, vanilla
  • 1 tbsp maple syrup
  • 2 tbsp almond flour
  • 1 tbsp nutritional yeast
  • 1 tsp cinnamon
  • coconut oil
  • 12 slices tapioca bread

Directions

  1. Whisk together almond milk, maple syrup, flour, nutritional yeast and cinnamon.
  2. Coat each slice of bread thoroughly.
  3. Heat coconut oil in large pan over medium-high heat. When it's hot, place the bread slices in and cook for a few minutes per side until golden brown.
  4. Top with powdered sugar, vegan butter, maple syrup, coconut butter, fruit butter, fresh fruit...the possibilities are endless!

  5. Mm…this looks really good. I do love breakfast food. I don’t know what my favorite would be. I tend to eat eggs and/or pancakes if my family is doing breakfast. That’s awesome you met with a financial adviser and it’s helping you out. I have not seen one. Granted, I’m still looking for a full time job so I can’t do too much with my money right now beyond living, etc. LOL I do try and save where I can though.

    1. I always wonder why I don’t make it more often after I do make it, haha. I feel like it’s more complicated/time-consuming than it actually ends up being in real life!

    I have met with a financial advisor long ago, when I actually had money to do something with ! Now I don’t really but I try to keep a handle on things and plan ahead so that we can travel and do the things we like to do.

  16. We have a financial advisor. My husband has to trick me into going to see him (Hey, honey! Want to go out to lunch? Oh, but while we’re out, let’s go see Bob.). It’s so painfully boring and I hate the way they micro-analyze every detail. I’m much more straightforward – I want my money here, here, and here. Let’s eat.

    This looks good, and not soggy, which is important for french toast. My fave breakfast is eggs. I don’t love pancakes, waffles or french toast. And I’m equal opportunity sweet and savory.

  18. I love making vegan French toast! I had given up on the idea of ever eating French toast because I don’t really do eggs, so when I discovered that I could make French toast egg-free I was super excited :) I think I need to make some again soon!
