Blueberry Rhubarb Crisp

This blueberry rhubarb crisp recipe was originally published 5(?!) years ago on May 4th (back when this was pretty much just my private journal), but it fits perfectly with this month’s Recipe ReDux theme because it was one of the recipes from my birthday picnic! :D (One of my med school friends made this as part of the surprise birthday picnic they threw for me and I pilfered the recipe from her!)

Much as I love summer, spring is near and dear to my heart because it’s when nice weather comes back into our lives again. It actually also happens to be the season I ended up being born in (I was supposed to be a summer baby).

Today’s actually my birthday, so if all is going according to plan, I should be out frolicking in the wilderness because April 21 is the first day of National Park Week this year! I’m most likely climbing a mountain at Shenandoah National Park with a friend right now. :] Hopefully I’ll get around to writing about it sometime this year on a Travel Tuesday. :D…

Blueberry Rhubarb Crisp

You'll Need...

  • 6 stalks rhubarb stalks, cubed (NOT the leaf! it's toxic :[ )
  • 2-3 cups blueberries*
  • half a lemon, juiced
  • a few tbsp sugar
  • 1 1/2 cup granola
  • 1/4 almonds

Directions

  1. Preheat oven to 375.
  2. Toss fruit with lemon juice + sugar.
  3. Bake until soft and bubbly (~20-30 min).
  4. Sprinkle with granola + nuts (if desired) and let cool to gain thickness.

Additional Notes

*You can also use peaches or some other type of fruit to make it sweeter!

  5. I love rhubarb! I’m partial to strawberry rhubarb cobbler since my grandma made such a delicious one, but I can’t say I’ve tried mixing it with blubeberries! I’ll have to give it a go.

  11. I have a pretty killer strawberry/rhubarb crisp recipe, but I bet blueberries would be a great substitute in there, too! I never would have thought to combine blueberries with rhubarb ;-)
